Get a crock pot and put healthy meals together too. they are handy, and great and make it all in one dish/pan

Hi all. Still on bed rest and doing pretty good.hopefull in two weeks will be back on track here again real soon

Hi marianne, thanks for the encouragement, my biggest problem and it will always be so is I can't do anything myself, I must depend on others to take me. I can't drive, epilepsy. so I can't just pick up and go. I will have to plan more

Mike - I understand your frustrations. I'm an engineer by trade and never learned the finer skills such as cooking, sewing and other things usually associated with women. When I tried to cook for a friend, I had to buy Stouffers lasagna and try to pass it off as my own. I don't think I was capable of boiling water, other than in a test tube in Chemistry.
Granted that was a lot of years ago, but I never gained confidence in cooking, other than baking since that WAS "following the recipe". Making dinners scared me, and since I was brought up in the Netherlands by "we lived through the hell years of WW2" parents, nothing was ever wasted.
What turned things a bit for me (I'm still not confident) was taking a basic cooking class at a junior college, actually I think it was a night class at the local high school. Here I was, with my fancy degree, learning how to broil, grill, prepare veggies for cooking, etc. I learned a lot.
So instead of giving up, check out your community's offerings. Check the home economics department at the county extension office (I'm assuming you are in the States, forgive me if I'm in left field here). No matter, wherever you are, hospitals usually have contacts with cooking classes for diabetics....get in there if you can. Check the web for on line classes with videos. There are several recipe sites that have videos on how to cook things. Look at some of the recipes/foods that would work in your plan and then google the ever living daylights out of it til you find a recipe with either video, or such explicit directions that you'd feel confident trying it. Believe me, even your worst failures will be good enough to eat (well, except for the one that I set on fire! LOL)
Don't go whole hog, try a recipe a week. Maybe make a soup....you can have that every other day for several days.
Bottom line.......try to look at cooking as a new hobby, collect all your "toys" for it (books, recipes, videos, utensils, food) and make a weekend morning out of it. We can't begin to guess why you are not getting the support you need, but....all this is for your health, your well being (oh yea, you do feel better and have a better outlook when you are eating REAL food) and your ability to meet a goal you've set for yourself.
Don't quit....re-examine, re-direct and think outside the box! You have the ability!!!!

I was not referring to wasting as not being to eat it all, I was thinking if I ruin it in preparation

You are worth it! Please, please do not give up!
Like someone has all ready said, make stir fry's, grill meat, eat raw veggies and fruit. As far as wasting food goes, measure it and if there is left overs put them in the ref. for the next meal. Whatever you do, PLEASE DO NOT GIVE UP!

Dorothy my wifes attitude is that people shouldn't have to as for help, as far as cooking go she just said read the instruction, true but I am paranoid about wasting food, I was brought up not to do that.

Why bother?
Because you are worth it !!!!!!
Veggies are good raw or just boiled or baked.
Lean meats are great grilled, baked, broiled or stir fried. Find some easy recipes that sound good to you.
As long as you keep it simple--cooking isn't hard.
Good luck & DO NOT GIVE UP !!!

Don't give up because you will be putting your health on the line. Your wife may be scared that once you lose the weight that you will not want her any more and that may be one reason that she is not supporting you. You will have to talk to her and tell her that the reason you are losing weight is so that you can do more things with her and to be with her for a long time. That maybe what she needs to hear right now.

what do you do when you want to give up, its not the work out I can handle that it is the eating. I am no cook, I am ok if I can just put something in the microwave but anything else totally overwhelms me and my wife is totally unsupporting as usual. I feel like like why bother
