Cherry cheesecake always disappears. Take softened cream cheese and blend with 1 can sweetened condensed milk. and add 1/3 cup lemon juice, 1 tsp vanilla. Pour into a graham cracker crust and top with canned cherries. Yum. Oh yeah, don't count the calories or have a very small piece.

I don't recall where I found this recipe, but this rice pudding is really good.

Rice Pudding........

3C cooked rice

4C milk-devided (3C and 1C)

10T sugar (I use about 3/4 C)

2 large eggs

1C raisens (I don't use them)

2T margerine or butter

1t vanilla

cinnamon for top of pudding

In medium saucepan over medium heat combine cooked rice, 3C milk, and sugar. Cook, stirring occasionally 15 to 20 minutes till thick and slightly creamy. Turn off heat. Beat remaining milk with the eggs. Stir that into the rice, and then stir in the raisens (raisens are optional). Without letting the pudding boil, continue to cook for 2 more minutes. Stir in butter or margerine and the vanilla. Put the pudding in a bowl and sprinkle with cinnamon.
We eat this pudding cold. Enjoy!!!

PS A lady I know used UNCOOKED rice. Learn by her mistake. Cook the rice first. love, Darlene

Here is my newest favorite:
Corn Tortilla Chicken Lasagna Recipe


24 Servings
Prep: 40 min. Bake: 35 min. + standing
Ingredients
36 corn tortillas (6 inches)
6 cups cubed cooked chicken breast (canned is OK)
1 16 ounce can red chili beans with sauce
2 16 ounces) black beans rinsed and drained
3 jars (16 ounces each) salsa
3 cups (24 ounces) sour cream
3 large green peppers, chopped
3 cans (3.8 ounces each) sliced ripe olives, drained
3 cups (12 ounces) shredded Monterey Jack cheese
3 cups (12 ounces) shredded cheddar cheese
Directions
Saute chopped onion and incorporate into each of the bowls below
First, mix in separate bowls: 1 cup chicken, 2/3 cup kidney beans, 1 cup salsa, 1/2 cup sour cream, 1/2 cup green pepper, about 1/3 cup olives,
In each of two greased 13-in. x 9-in. baking dishes, arrange six tortillas. Top each with 1/2 cup Monterey Jack cheese and 1/2 cup cheddar cheese. Repeat layers twice.
Cover and bake at 350 for 25 minutes. Uncover; bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before serving. Yield: 2 casseroles (12 servings each).

Maybe it is the holidays, but I have lots of church and a few work pot-luck meals coming up. It is always so fun to take something new. Since we represent so many parts of the country, we probably can spice up each others' church suppers emoticon if we exchange recipies.
