I'm thinking that I can do things like peel and slice apples and then vacuum seal them and throw them in my cooler.  And grapes, oh heck just about any of the fruits I like.  But that brings up another question...I have no experience with a vacuum sealer, don't have one yet.  Will that work?  I'm not going to have a lot of space in my little cooler, because I have to keep water in there, too (which I will bring from home, I'm too cheap to pay for water).  But again, little space, long time out and do I really want to spend a whole day chopping fruit?  Granola is a great idea, but even the soft chewy bars end up hurting my mouth (I will be sooo glad when I can get new teeth).  Anyhow, thanks for the ideas.  And what do you mean, you aren't creative at midnight, what kind of Mom can't function 24/7?

Granola? How about some unsweetened dried fruit? Let me see what I can think of.. Midnight is not my most creative time to think lately!

Okay, I admit, I'm not really all that dedicated to eating healthy...I have issues with food. But it is so hard to find good choices out here. I love salads, lots of leafy green stuff, a few cucumbers and a tomato or two, but do you have any idea how hard that is to get? You walk up to the salad bar and see some guy stick his hand into the tub of raw carrots or some woman coughing all over the bar... Or you find lettuce that looks like it's been sitting there all week, vinegared cucumbers and not a tomato in site.
And the menu choices aren't much better. It's the same old, same old, no matter where you go. Everything is pre-packaged, heat and eat, even in the so called sit down places. The food comes out over-cooked and dry or completely tasteless. And it's even harder for me right now, because my Grumpy can't stand the smell of a Subway, much less actually eat the food.
So, I'm having a hard time at this point. I'm not gaining, but I'm not losing either, even though I'm working hard and building muscle.
So, here's the deal...I plan to do a lot of Subway (not a lot of choices out here), when I get my own truck, but I need GOOD ideas for healthy low cal snacks that will fill me up. I'm love fruit, but I need stuff that I can eat while rolling and will keep while I'm out for a month at a time. And don't forget, I have no teeth, so keeping a bag of apples in probably not going to work.
