I too have a lot of nervous energy when I prepare sermons and write in general. I created a small standing desk in my study (I use an adjustable hospital table) that allows me to stand and write. In addition to burning more calories than sitting alone, it gives me more space for fidgeting...it also helps my back.

For me, the sermon munchies are about ADD. I can't concentrate long enough to write, so a quick bite keeps me at the computer, but gives my mind a break. I've changed that to a mindless computer game, and it seems to be working.

I also have a moderately strict regime for sermon-writing. Sunday/Monday for preliminary work with the text, Monday/Tuesday, sometimes Wednesday for research, Wednesday/Thursday for figuring it out. Thursday/Friday, which occasionally runs into Saturday, writing. Saturday evening is for writing prayers. I used to follow this from Paul Scott Wilson's The Practice of Preaching, but now use Kindling Desire for God by Kay Northcutt. I recommend the latter highly, although it took a while for it to seem natural.

Last week as I was writing my sermon I recognized a bad habit that I have developed over the years. I tend to munch when I writing a sermon. The munchies tend to get worse if I am having difficulty with the text at hand. The munchies I desire are salty carbs like potato chips or even Ramen noodles. I ended up going way over my calories for the day and my sodium was outrageous.

Does anyone else have this issue? How have you dealt with it?

I know that part of the issue is that I often wait until the night before to write the sermon. Therefore the sermon munchies are also stress eating. I keep telling my husband that the Spirit doesn't move until after 10:00 Saturday night. So I know it is not just one bad habit that I am fighting here.
