I used to drink orange juice before I developed diabetes, now I can't touch the stuff unless I'm having a low. It makes me sad since I used to drink it by the liter *sigh*. As for me, I sneak bananas and berries into smoothies for after I work out and need a carb. boost and if I have a low I reach for a banana instead of glucose tabs (most of the time, anyway, lol). I also LOVE pears because 1) they're super yummy and 2) they don't mess with my bg.

Good suggestions so far, but don't forget that a "serving" isn't always what you think it might be. A BIG apple is probably closer to 2 servings than one, same with bananas and as little as 4oz of juice (dpeneds on the juice though) is one serving. 10 baby carrots, 1 roma tomato, 1 cup of leafy greens, 15 grapes....
More is better for sure, but it might not be as hard as you think to get in what seems like a little bit here and there in order to get your servings in each day.

Here's an article you might not have read yet with some examples of serving sizes as well as ways to incorporate more fruits and veggies.

One of the best things invented was that low sodium V-8 juice, then they came out with fruit and veggie juice mixed, you get a full serving of a fruit and veg in every glass.I also bump up my omelets in the morning with all kinds of veggies and even put veggies in my turkey m,eatloaf the kids hardly notice the onions, peppers, mushrooms and really choppes up spinach I hide in there. emoticon

Hubby is the diabetic in the family, but I hope you don't mind if I answer. I've been eating the South Beach way for over a year and I have no problems eating as many servings of fruits and veggies that Spark People prescribes or more. The trick to South Beach and, I think, to getting all of your Spark servings in, is to make veggies the main focus of every lunch and supper. Don't eat just salads or you will get bored. Try veggie omelets for breakfast or a glass of V8. Eat stir fries, stews, and roasted veggies. It isn't hard when you think "veggies first".

Drink Fresh orange juice for breakfast, eat at least two different veggies to your lunch, squeeze a fruit in in the afternoon, have another two veggies for dinner, and then a fruit in the evening. I know that is only seven^^ But Perhaps you can fit in one more ; ) hahaha.. It is just to try really really hard! You can do it!!
Good luck : )

So this week I've really been trying to focus on eating the full amount of servings of fruits/veggies per day and drinking 8 glasses of water per day.

I am able to drink 8 glasses of water per day... no problem! But, I cannot seem to eat more than like two servings on veggies/fruits per day! How do all you guys do it!??! Any advice?
