I haven't had any experience using different flours, so I can't help out on that one.

I have substituted the full amount of sugar with Splenda and we've all liked how it comes out. I also read somewhere that you can cut sugar by 25% or 1/4 cup and most people won't even notice.

I'm looking for some recipes that others have had success with, specifically:

chocolate and coconut macaroon
soft molasses spice
soft oatmeal

For my own diet I've cut sugar in half with Splenda, reduced fat in half with apple sauce and mixed whole wheat and white flours, but Hubby would now prefer sugar-free recipes that use all whole wheat flour. Ideas? Thanks.
