like you i am always trying to think of ways to adapt.if i am cooking for my family then it is usually like you in adding more vegtables. as my older son is not alloud low fat milk products.i would then find ways of reducing the sugar contents,or for a cheese topping instead of totally cheese go half cheese and the other half a mixture of bread crumbs,seasam and nut to help cut the fat context.if i was making just for me it would be the usual swaps.low fat cheese,low fat milk.yogurt state cream,less sugar.half fat butter,half meat ,half lentil or beans etc.you get the idea.hope this helps.
