Yeah, lentils and barley is healthy, as long as it is not all you eat.

You know, I think finding this site is actually helping me focus more on what I need to do again. I'm really happy about that!

For the record, lol, I am vegan but I am not "crunchy" about it. It's what I need to do, and it got me out of my life of constant pain. BUT I don't freak out if, for example, the server forgets the "No cheese, please" and my salad comes with it. I remove the obvious stuff and don't worry about the rest. I do pay for their mistake, but I don't think it's gonna kill me if it happens once in a while. I'm not a militant vegan, lol :)

I can totally understand-when I was married for a while I baked all our bread-and we ate it a lot
more! But I am not Vegan and when I eat bread I also eat butter-lots of butter! Or even Earth
Balance-still lots! I am doing better since eliminating most of my bread...personally,I believe
that beans and lentils are healthy-just don't use too much rice! One very cheap, easy thing I do
is throw a large can of crushed tomatoes in the crock pot along with a large bag of frozen vegies
(or leftover vegies) some vegie meat(or not) and a little extra water or tomatoe sauce with different spices. I even like it cold!

Carbs are definitely my weakness. I have a large family, so I bake alot of bread. When I eat it I don't lose weight as fast, for sure. But I stopped losing weight altogether, so I'm up for cutting down the carbs to help! I eat vegan, and have done so for two years now. I mentioned in my intro that when money is tight, I often find myself lving on things like beans and rice or lentils and barley. NOT GOOD...

I struggle with snacking too. Usually the only thing that helps is to let myself have only one snack of a bowl of air popped popcorn. Usually the popcorn makes me feel a little more like I'm not depriving myself.

I just started yesterday, so I can't say really what is a typical. But, something like:

Breakfast:
1 slice ezekiel bread with peanut butter

Lunch:
salad with avocadoes, olives, beans, and light dressing.

Dinner:
stir fry with brown rice, tofu, and vegetables.

I think that is mostly what I am trying to do when I say low carb, but I am also trying to keep my
carbs under 30-40 per meal-though I am not counting most vegetables or being strick about it.
What would be a typical meal for you?

I'm not doing low carb, but starting tomorrow, I'm going to try to eliminate all sugar and all flour. I did the Dr. Gott's diet for a while during one of my pregnancies, and I think that it really helped. As a new vegan, sugar and flour are usually the areas where I am tempted the most. I'm going to continue to eat vegan, but also elminate sugar and flour hoping to speed up my weight loss.

Otherwise, it's definitely not a low carb diet as you would normally think, but it will definitely help me to not overeat on the carbs that aren't healthy for me anyways.
