Slow Cooker Shrimp Jambalaya
Fish/Vegetarian dinner

Great for those rushed dinners!


Ingredients

1 lb boneless skinless chicken breasts, cut into 1 in pieces.
1/2 lb andouille sausage, or chorizo, diced
1 (28 oz) can diced tomatoes
1 medium onion, chopped
1 green bell pepper, seeded and chopped
1 stalk celery, chopped
1 cup fat free or reduced sodium chicken broth
2 tsp dried oregano
2 tsp cajun or creole seasoning
1 tsp hot sauce or more depending on your tastebuds
2 bay leaves
1/2 tsp dried thyme
1 lb frozen, peeled and cooked shrimp, thawed
cooked rice


Directions
In a slow cooker, combine chicken, sausage, tomatoes, onion, green pepper, celery and chicken broth. Stir in oregano, cajun seasoning, hot sauce, bay leaves and thyme.
Cover and cook on LOW for 7 hours or HIGH for 3 hours. Stir in the thawed shrimp, over and cook until the shrimp is heated through, about 5 to 10 minutes. Discard bay leaves and spoon mixture over cooked rice.
TIP: Sometimes I make this in the crockpot without the shrimp, store it for a day or two. You can even make this ahead of time, store in freezer and warm it through and add the shrimp at the end.

For a sexy desert to share with your special someone, try this luscious dark mocha desert that's as easy to make as any instant pudding mix. This recipe makes four small servings at less than 100 calories each, or two very generous helpings at still less than 190 calories. Dust the whipped topping with cocoa, cinnamon, or nutmeg for a special final touch.
65 Minutes to Prepare and Cook


Ingredients

1 Box Sugar-Free Fat-Free Instant Pudding Mix - Chocolate Fudge flavor
1 Tablespoon Instant Espresso Powder
1 1/2 Cups Fat Free Milk*
1/2 Cup Non-dairy whipped topping (either Fat-Free or LIte, according to your personal preference)



*Note: The amount of milk called for differs from the amount called for on the box. This is not an oversight, but makes for a richer thicker desert.


Directions
Whisk together the pudding mix and the instant espresso powder in a medium sized bowl. Add the 1 1/2 Cups milk and whisk until well mixed. (You can also use a blender.)


Pour the pudding into individual dishes. Chill for at least one hour. Add 2 tablespoons of whipped topping to each dish and garnish as desired.


Makes 4 servings.

30 Minutes to Prepare and Cook


Ingredients

1 C. Sugar
1 C. Light corn syrup
1 1/2 C. Chunky Peanut Butter
6 C. Cornflakes
1 t. Vanilla extract


Directions
1. In a saucepan bring sugar and white corn syrup to a rolling boil.
2. Remove from heat and stir in peanut butter and stir until melted, stir in vanilla extract.
3. Pour mixture over cornflakes and stir until coated.
4. Roll into balls the size of a quarter.
Hints: I scoop the mixture out into mounds first then go back and roll them, this way they arent so hot. Also, i spray my hands with cooking spray to prevent sticking.

Ingredients

2 small bananas, broken into chunks
1 cup frozen unsweetened strawberries
1 (8 ounce) container low-fat strawberry-banana yogurt
3/4 cup nonfat milk




Directions
1. In a blender, combine bananas, frozen strawberries, yogurt and milk.
2. Blend until smooth.
3. Pour into 2 glasses and serve.

Need a snack for the super bowl. Here's an idea.

Kim's lowfat jalapeno poppers

A tasty variation on the traditional popper. My hubby likes these for superbowl sunday. You can also vary the recipe by adding 2 -4 T fat free sharp cheddar shreds to the cream cheese mixture. Also you can use panko crumbs for a crispier coating. Make these at least once before serving to company, as it takes a knack to get them to come out nice looking.
25 Minutes to Prepare and Cook


Ingredients

20 whole,jalapenos
1 c. fat free cream cheese
1/4 tsp taco seasoning or chipotle powder
1/2 tsp garlic powder
1 c. bread crumbs, plain
1/4 c, finely diced green chiles or jalapenos, depending on heat preference
dash salt
2 egg whites
cookingspray


Directions
Preheat oven to 400 degrees F (200 degrees C).
Mix together the eggwhites and a tsp water in a small bowl. In a separate bowl, mix together the bread crumbs, salt, pepper, taco/chipotle seasoning and garlic powder. Set aside.
Combine cream cheese and diced jalapenos in a small bowl. (Or fat free cheddar shreds if you prefer-calorie count will slightly higher)
Cut jalapenos in half lengthwise. Remove the seeds. Stuff each jalapeno half with equal portions of the cheese mixture. Place the halves back together and secure with toothpicks. Dip each stuffed jalapeno in the egg mixture and then coat with the crumb mixture. Arrange the breaded peppers on a baking sheet.
Bake in preheated oven until golden brown, about 15 minutes.

Here is a new recipe that I really like. I add splenda too because I have a sweet tooth!

Cranberry Sweet Potatoes

Ingredients

Cranberries, dried, sweetened (craisins), 0.5 cup
Orange Juice, 2 fl oz
Butter, salted, 1 tbsp
Olive Oil, 1 tbsp
Brown Sugar, 2 tbls packed
Cinnamon, ground, 1 tsp
Salt, .25 tsp
Yams or sweet potatoes 6 cup, cubes (2 pounds)

Nutritional Info


Fat: 4.5g
Carbohydrates: 51.7g
Calories:248.7
Protein: 2.2g

Mix orange juice, butter, oil, brown sugar, cinnamon, and salt. Put in crockpot and cook on high while preparing sweet potatoes. Stir cranberries and potatoes into warm mixture, cover and cook on high for 3 to 4 hours. Serves 6.


It's easy to reheat in the microwave. I like it mashed up with added Splenda. It's warm on a cold day!

Texas Style Stew

Ingredients


2 pounds sirloin tips, cut into 1-inch cubes
1 can (14.5 ounces) Mexican-style tomatoes or stewed tomatoes
1 can (10 1/2 oz) condensed beef broth, undiluted
1 cup mild or medium picante sauce
2 cups frozen whole kernel corn, thawed, or canned
3 medium carrots, cut into 1/2-inch slices
1 medium onion, cut in quarters then sliced
2 garlic cloves, crushed and minced
1/2 tsp salt

1/4 cup all-purpose flour
1/2 cup water


Nutritional Info


Fat: 6.5g
Carbohydrates: 26.6g
Calories:321.1
Protein: 39.8g




Combine sirloin tips, tomatoes, beef broth, picante sauce or salsa, corn, carrots, onion, garlic, cumin, and salt. Cook, covered, on HIGH setting 3 to 4 hours, or until meat is tender. Stir together flour and water.

Stir flour mixture into stew mixture and cook on HIGH setting 1 hour or until thickened. Serves 6.

245 Minutes to Prepare and Cook


Ingredients

3-4 Chicken Breasts
2 15-oz. cans black beans, undrained
2 15-oz. cans Mexican stewed tomatoes
1 cup salsa
4-oz. can chopped green chilies
14.5-oz. can tomato sauce


Directions
Spray crockpot with non-stick spray. Place chicken breasts in the bottom of the crock (can be frozen still). Add remaining ingredients on top. Cook for 8-9 hours on LOW or 4-5 hours on HIGH. Can sprinkle part skim mozarella cheese on top. Makes approximately 12 1-cup servings.

Leftover Ham? Try this comfort food chowder with peas and potatoes, too!
30 Minutes to Prepare and Cook


Ingredients

1/2 c. Chopped onion (Vidallia was yummy!)
2 Tbsp. Olive oil
2 c. Diced ham
1 vegetable bouillon cube
3 c. diced potatoes
4 c. diced cauliflower (1 med. head)
2 c. frozen peas
1 can nonfat evaporated milk (12 fl oz)
1 c Shredded Kraft 2% Sharp Cheddar Cheese




Directions
Sautee onions in olive oil in a LARGE SAUCE PAN. Salt and pepper to taste.
Add diced ham and let brown slightly (just to bring out the flavor as the ham should be already cooked).
Add potatoes and bouillon cube and fill pan almost half way with water.
Bring to a boil, then add cauliflower.
When cauliflower is almost done, add peas, evaporated milk, and sharp cheddar, stirring occasionally.
Cook for about 5 more minutes and serve.
Makes 12 1-cup servings.

Skillet Lasagna
Beef/Pork Italian dinner

A much quicker version of the Italian classic; less time, but no less taste.

Ingredients

1 lb lean ground beef
1 small onion (chopped)
3 Cloves Garlic (minced)
1 can diced tomatoes (undrained)
1-1/4 cup water
8 oz tomato sauce
1 tbsp dried parsley flakes
1 tsp dried basil leaves
1 tsp dried oregano leaves
1 tsp salt
2-1/2 cup broken up whole wheat lasagna noodles
1 cup fat free cottage cheese
1/4 cup fat free grated Parmesan cheese
Dash Basil and Pepper (optional)
1 egg
Shredded fat free mozzarella cheese for garnish


Directions
In a large skillet, brown beef with onions and garlic Drain.
Add tomatoes, water, tomato sauce, parsley, basil, oregano, and salt.
Stir in uncooked pasta.
Bring to a boil, stirring occasionally.
Reduce heat, cover and simmer for 20 minutes or until pasta is tender.
Combine cottage and Parmesan cheeses.
Mix in the egg.
Sprinkle in basil and pepper to taste.
Drop cheese mixture by rounded tablespoons onto pasta mixture.
Cover and cook for 5 minutes more.
Sprinkle with shredded mozzarella and serve.

Sounds good Jennifer. I also made what I call an apple crisp. I used unsweetened apple pie filling added some cinnamon and sprinkled that with quaker instant oatmeal (I used maple). It was very yummy.

I think I could eat Mexican food everyday! Sounds great! Some of you were mentioning that it was hard for you to get your fruit in when it is so darn cold outside! Here is a recipe for warm fruit:

Ingredients

Peaches, fresh or frozen, 1 cup slices
fat free plain yogurt, 1/3 cup
Graham Crackers, plain, 1 large rectangular piece
Cinnamon, ground, .5 tsp
Spenda 1 tsp.

Directions
Microwave the peaches, cinnamon and splenda until hot. Add the yogurt and mix. Crumble the cracker on top. Enjoy!
One serving.

I also like to eat warm berries with a bit of melted dark chocolate - yum!

Today I am fixing fajitas in the crockpot. My house smells wonderful.

I just cut up a green and red bell, onions and thinly sliced meat. Added fajitas seasoning and 1/2 cup beer. I can't wait to try them tonight.

Shelley's Sour Cream Chicken Enchiladas

This recipe makes quite a bit, so you can take half of the remaining chicken mixture and sauce and make soup. See "sour cream chicken enchilada soup" that I also submitted.

Ingredients

16 oz. fat free sour cream
1 can fat free cream of chicken soup
1 tbls. fresh chopped cilantro (1/2 tbls. dried)
2 1/2 cups cooked shredded chicken breast
1 can Mexican Rotel
1 cup chopped onions
16 corn tortillas
8 oz. shredded pepper jack and colby cheese blend
1 can diced green chiles


Directions
In a saucepan, mix together sour cream, soup and cilantro. Heat through and set aside.
Combine the chicken, Rotel, onions and green chiles in a pan sprayed with cooking spray. Heat until onions are transparent.
Warm the tortillas until flexible. Then, fill each tortilla with about 2 tbls. of the chicken mixture and about 1 tbls. of the cheese. Roll tortilla up and place seam side down in a 8x11 dish sprayed with cooking spray.
Pour over the sour cream sauce and top with the remaining cheese.
Bake in a 350 degree oven for about 30 minutes or until heated through.
Makes 8 servings of 2 enchiladas each.

Serves: 6

Using low fat yogurt makes this healthier than other recipes Reprinted with permission by Public Health - Seattle & King County.

INGREDIENTS
4 medium sized apples, cubed
3 stalks of celery, chopped
1/3 cup walnuts, chopped
1/2 cup low fat yogurt, plain
1/3 cup raisins

DIRECTIONS
1. Combine apples, celery, raisins, and walnuts in a bowl. Stir.
2. Add yogurt and stir all ingredients together.
3. Chill to blend flavors or enjoy right away.

1-1/2 cups fresh broccoli
1-1/2 cups fresh cauliflower
3-3/4 cups water



Brown hamburger in pan and drain excess fat.
Bring soup, water and diced veggies to a boil in a separate pot. Add hamburger.
Turn off heat and add rice.
Cover and let stand 6 minutes.
Enjoy!

Low fat waffles

Ingredients

1 cup flour
2 tsp baking powder
2 tbspn sugar
1 dash salt

1 egg
3/4 cup milk
1/4 cup applesauce
1 tsp vanilla

Cooking spray



Directions
Mix all dry ingredients - mix all wet ingredients then pour all wet ingredients in with dry. Mix until all is well incorporated with wisk.
Laddle into waffle iron that has been sprayed with cooking spray (this item I couldn't find in the add a food). Cook until golden brown
Makes 3 large waffles

I tried a similar recipe one time and it is pretty good. I think the recipe I had used fat free sour cream instead of fat free half and half, though.

Cauliflower Mashed
Side Items

These �mashed potatoes� taste just as good as the real thing, but they�re much lower in carbs!

Ingredients




6 cups of chopped cauliflower (fresh or frozen)


1 1/2 oz. Smart Balance spread, melted


1 1/2 oz. half and half (or fat free half and half)


salt


white pepper





Directions
1. Heat cauliflower with an inch of water in a microwave safe bowl until tender.

2. Mash cauliflower with spread and half and half until at the desired consistency. Add salt and white pepper to taste.

Serves 4.

Also a note about cauliflower. I chop it up and put it in soup and it makes it seem like there is rice in the soup.

Here's a great low-fat way to kick-start your morning or get that much needed afternoon boost.
10 Minutes to Prepare and Cook


Ingredients

3 cups sliced fresh strawberries
1 cup (8 ounces) fat-free vanilla yogurt
1 cup fat-free milk
2 tablespoons nonfat dry milk powder
2 tablespoons sugar
2 tablespoons reduced-sugar strawberry fruit spread


Directions
Combine all ingredients in a blender or food processor. Cover and process until smooth. Pour into glasses; serve immediately
Per serving: Calories 153, fat 0 g, saturated fat 0 g, cholesterol 3 mg, sodium 79 mg, carbohydrates 32 g, fiber 3 g, protein 6 g.

Chicken & Asparagus Pasta




Fat: 6.6 g

Carbohydrates: 25.4g

Calories: 204.2

Protein: 14.4g







A quick and easy pasta dish.



3 cups whole wheat extra wide pasta
12 spears asparagus
1/2 chicken breast, bone and skin removed
1-1/2 cups fresh mushrooms, pieces or slices
1/2 cup low sodium chicken broth
1 tbsp extra virgin olive oil
1/4 cup feta cheese, crumbled
1 medium tomato
Pinch of pepper, red or cayenne



Cook pasta according to package directions.
Meanwhile, cut chicken into bite-sized cubes and place in skillet with olive oil.
Cook until partially done.
Add asparagus and mushrooms, continue cooking until chicken is done.
Add chicken broth and cover pan, cook until asparagus is crisp tender.
Add pasta, red pepper flakes (to taste), and feta cheese. Remove from heat.
Serve with fresh diced tomatoes to garnish. Enjoy!

Easy, Yummy Fiber Snacks

A great way to get some of your RDA of fiber and chocolate!
5 Minutes to Prepare and Cook


Ingredients

3 squares of Hershey's Special Dark Chocolate (the larger squares from the 8 oz. bar)
1/2 cup Fiber One cereal


Directions
Melt chocolate in microwave on High 30 seconds at a time until melted.
Mix in cereal and stir until all cereal is coated.
Scoop 4 servings onto wax paper and put in refrigerator until cooled.
Yummy!
Makes 4 servings. Thanks to Nancy for this recipe!

Slow Cooker Beef Stew
Beef/Pork Other Low Fat dinner

Beef, Barley, Veggies, and Lentils!
440 Minutes to Prepare and Cook


Ingredients

2 lbs cubed beef
1 cup carrots, chopped
2 cups potatoes, chopped
1 cup onion, chopped
1 cup celery, chopped
1 cup peas
1 cup barley, uncooked
1 cup lentils, uncooked
2 packages beef stew seasoning mix
8 cups water
1/4 cup whole wheat flour


Directions
1. Combine seasoning mix, water, and flour and whisk together in slow cooker pot.
2. Add all remaining ingredients to slow cooker.
3. Cover and cook on low for 6 to 8 hours, or until beef cubes are cooked through, and veggies are at desired tenderness. Stir occasionally. (Cook on high for 4 hours)
If stew is too runny, combine 2 tablespoons of flower with 2 tablespoons of water and whisk until made into a paste. Add to stew, cover, and cook for an additional 5 minutes.
Makes 25 1-cup servings. Since it is such a large batch, you can freeze some of it to eat at a later date.

I thought it would be fun to have a place to post recipes. If you have one you like please feel free to post here. This is todays recipe:


Fat: 1.6 g

Carbohydrates: 7.3g

Calories: 51.6

Protein: 3.2g







This quick and healthy snack tastes like a gormet side-dish, but just takes minutes to prepare! And as a bonus, it's an easy way to get the kids to eat their vegetables.



Zucchini, 1 cup, sliced
Parmesan Cheese, grated, 1 tbsp
I Can't Believe It's Not Butter, Original Buttery Spray, 10 sprays
Non-stick cooking spray



Line a cookie sheet with aluminum foil, then coat with some non-stick cooking spray. Place the zucchini slices out on the pan, then spritz with them with the butter spray. Sprinkle on the parmesan cheese and then pop it in the oven. Broil for a few minutes - until the cheese starts to brown. Enjoy it while it's warm!

Make a larger batch for a delicious and healthy side dish for any meal! Your family will love it!
