Salmon in the air fryer is wonderful. I've tried others in there too and they're all good. It's a learning curve.

Do you have a specialty when it comes to a healthy meal?

My March goals are:

1. Track more (at least 21 days)
2. Lose 2.1 pounds, at least. (I gained weight in February--this has to stop)
3. Continue to exercise 3 to 5 times a week
4. Work on organizing sewing room better.
5. Continue to put together my Grassy Creek tops and get ready to quilt them.
6. Quit mindless snacking.

UGH I really don't go out and exercise. Just normal living is my exercise as my Polio body cannot do both. I am hoping to get back to the pool to enjoy water walking for 10 to 15 minutes.

How is your favorite way to prepare fish?

We rarely have meatless days. Unless it is macaroni and cheese for dinner. We had some leftover broccoli, onion and carrots and a small potato in the fridge and a frozen bag of soup broth. I put all of it in a pot and cooked it. Then pureed it in the blender. Back in the pot I added reserved broccoli and added a half bag of cheese and some milk. Made a creamy soup!

What motivates you to go out and exercise? I am such a slug.

I enjoy roasted veggies. It is great for winter veggies especially. Cauliflower, carrots, onions, green beans, mushrooms, and a little of olive oil and balsamic vinegar over the top. Speaking of balsamic vinegar, it is great for dipping veggies or marinating raw veggies. Kabobs on the grill are also tasty. You can make your kabob with more veggies than fruits and they are still very satisfying.

Do you have meatless days?

I dont know the pancake answer Pam. Just yummy they are. I donate quilts to Lutheran World Relief and to our guild. And I give them away when the urge comes. Like when a friend has cancer. A woman at church has breast cancer and going through chemo. I need to get one to her. Maybe we can tie one at church. there is one already that I did but it is civil war and she needs a pretty one. I was so fortunate with my breast cancer. No chemo and just radiation. But hers went into her lymph nodes.

What are you grateful for today?

Not this week I haven't. I am very low on F&V this week. Really I have to get more fruit, that is one issue. I also need to clean 3 heads of romaine so I can have salads again.

Why do pancakes have so many calories when you have the good Maple Syrup on them?

You would probably be shocked at how much beef we eat in a month. Let's just say we have beef frequently. When you have a side of beef in your freezer, you eat it. Neither of us have any cholesterol or heart problems so will continue to eat it.

Have you been eating enough fruits and vegetables?

I love to donate quilts to 2 places: The Kids Place, a place where kids are placed when their parents are arrested and their is no family to take them. They are there until they get foster home placement.
The 2nd place is a local nursing home where the folks enjoy a small quilt for over their legs.

How much Beef do you eat in a month?

"They" say we burn about 50,000 calories a year doing housework. I suspect that it counts especially when doing a lot of moving. The biggest problem is that it usually isn't sustained and may not bring up the heart rate enough but the moving and other things certainly count. I remember my mom doing the twist as she watered the house plants when we were growing up.

Where is your favorite place to donate quilts?

It depends on which week it is. If it is my week for the kids to eat here, I will have a nice meal but we don't tend to eat totally traditional meals but whatever moves us that week. I sometimes will have ham but tend not to have ham often. I like it but it don't eat much of it. If the kids are eating at the in laws, I will have an egg hunt when it works for the kids either Saturday or Sunday and they will eat at the in laws.

What is your favorite spring meal? Do you eat more of the spring fruits and veggies?

I don't have any Easter or Spring quilts so I don't use them. I am making a table runner for a hall table that is seeing increased use. There is a photo there the grands enjoy looking at so I'm going to add some other interest to the table.

I have to file state tax April 15 so it doesn't matter what the Federal does.

Happy National Quilting Day. I'm going to finish DGS's quilt and hopefully start on an Easter table runner. I have one row left on the quilt so hopefully it will work.

My kids use their smart phones to remind them to get up and walk regularly. Do you use an electronic device to encourage you to move more?

Flexibility is very odd. I do stretching every other day. If I do it every day I get vertigo from the up and down!. Still can't touch my toes, but getting my right leg up higher so I can almost put on my socks by myself and maybe tie my shoes!

I have not been eating as many freggies as I have in the past and the scales really lets me know. I'm off to restock again and have planned to enjoy some more soups and other things. I'm interested in making some Japanese milk bread to go with it although a good baugette also works well.

I also miss tomatoes and corn. I love fresh corn on the cob as well as the green beans, the cucumbers, the fruits. Oh, I love fresh fruit.

What do you make as spring arrives? Is it different from winter meals?

We eat out or pick up once a week. It is my break from cooking!

How many minutes a day do you exercise? What type of exercise do you do?

I don't know - my daughter is in charge of Saturday dinner.

How often do you eat out or have a meal delivered?

I'm a fan of almost all fruits. I'd say probably peaches is my favorite in season. Don't usually buy fresh of them unless it is in season, they have a tendancy to be mushy.

What are you doing for dinner tonight?

Sad to say no! I have not done 15 mins of stretches every day. Just can’t get started.

I'm in favor of chocolate any time. Having a wrapped piece of dark chocolate is super fun. I have some minty ones and a salted dark chocolate truffle. It is amazing. When I have super craving, I have a diet soda with a little cream or creamer in it. I sip it and it satisfies some craving for sweet and the fat in the cream makes the hunger go away as well.

Are you getting outside more to exercise as the days are getting longer and spring is just around the corner?

My favorite lunch is a sandwich. I love BLTs and other sandwiches on whole wheat or a whole wheat with seeds bread and fresh ingredients. I normally have a salad as I'm determined to keep getting veggies and it is easier to start lunch with several.

My favorite soup is Tomato and grilled cheese sandwiches. Enlarging panels is an exercise in adding borders that fit. The sides of the panel need to be divisible by the finished size of the block you intend to use. You might need to add a coping strip to make it work.

Spring arrives here starting in March when the bulbs bloom but it is too cold to plant or have outside meals until after Mother's day. Growing up in the mountains, we didn't plant until after Memorial Day.

Carol, love homemade mac and cheese.

Snacks? I try not to eat them but nuts are good. I have gotten into the habit of having a piece of chocolate after dinner which sates me. I signed up for another month of Ruby Tuesday salads. I really got tired of them but as the weather warms, I might appreciate them more. And there were times when I just brought home stir-fry veggies to make a stir-fry. Most times I could get enough salad for 2 days. Starts on Monday. Carol

I no longer completely eliminate anything from my diet. I will try to find a substitute or just eat a little of it.
Bindings are hand sewn unless they're for a community service quilt or a two or three year old where there is a lot of wear. You think sewing black binding with black, try hand quilting dark blue on dark blue. I must have been crazy. Thankfully there's some off white too. I may be two more years. It's so hard to see.

I like to hand sew the bindings but I agree that black is hard. I have to do that one in full daylight. I am working on machine binding more as I do have cataracts and macular degeneration so I know that my eyesight will not hold out as long as my desire to sew.

No exercise except walking around tables at church while quilting. I like chicken corn chowder and recently made a beef stew that was very good. It is thundering and raining here today. A good day to sew.

We dont usually do anything special for Valentine's Day. They have an event at the Club but its $90 for two people and we aren't doing that. Maybe I'll make a heart cake for Sunday. I have the pans.

Do you handsew your binding or attched with machine? I like to handsew but this latest is black and hard on the eyes.

yes I drink lots of water and coffee in the am. Water is my drink of choice and I always have a glass at the ready, with ice. My next quilting project? So many to choose from. I think it is going to be the border for stitch pink. I waited until the right border came along and I think I found it while cleaning out a corner of my room and filing patterns away. Since my program for guild is about borders, I need to get this done. Or at least one side attached.

Homemade Macaroni and Cheese is my fall back. Son loves it. It is a rainy day today, not good for car sales. He's in a slump this week. yesterday I made a beef stew with on sale stew meat from Winn-Dixie. Son ate it and liked it. Left out the carrots and onions he did.
