When it's hot I've enjoyed eating potato salad with chicken or ham mixed into it, making it a potato salad casserole actually. hahaha

Does your microwave convection oven bake cookies? If so, I wouldn't mind at least some tips from someone who has done that. I may just risk ruining some cookie dough if I proceed anyway, but I'm all for known tips and tricks.

I tried a new feature on our microwave we bought when Sears was closing and our machine had died. We went with the convection microwave model, and this morning (after midnight) I finally recovered enough from the day to fix a meal and eat dinner. It was a rough day.

Anywho, I tried the microwave/convection setting to use both features heating up some rice w) veggie leftovers (cold from the fridge) and chopt chunks of beef country-style ribs (defrosted). I need to play with the timing and temperature setting (I think I should've used more time @ 275F). But I'm pleased.

If you do not have an adventure of some kind every day, you must be kidding yourself. Go out of your way in at least some small thing (like I did). You're here at SparkPeople because you are on a journey to good health, and our mind is a needful thing to exercise (our brain is a part of our body, remember?)

I'd made a bunch of rice on day, adding veggies on another day, then added some leftover chicken chunks, and I still have enough of my attempt to use it all up for a quick lunch tomorrow. No rest for the weary!

When I was growing up, often we kids would eat casserole but my Dad & Mom would eat meat, potatoes, vegetable. As time went on, Dad started eating casseroles but he called them "meat dishes". hahaha

I grew up thinking baked potato was something really special. I still agree.

I'm not even near perfect, but I know someone who is.

I loved veggies and cheese.

Here is a recipe for a 2-egg omelet made in the microwave. It comes from incredibleeggDOTorg.
I have some small tangine-style microwave dishes I bought at the $1tree. So I've used those or a mug, but never used a larger dish or pie plate.

What You Need
2 EGGS 2 Tbsp. water 1/8 tsp. salt Dash pepper 1 tsp. butter 1/3 to 1/2 cup filling, such as shredded cheese, finely chopped ham
Directions
1. BEAT eggs, water, salt and pepper in small bowl until blended.
2. MICROWAVE butter in 9-inch glass pie plate on HIGH until melted, about 45 seconds. TILT plate to coat bottom evenly. POUR egg mixture into hot pie plate. COVER TIGHTLY with plastic wrap.
3. MICROWAVE egg mixture on HIGH 2 to 3 minutes, rotating 1/4 turn every 30 seconds. Do not stir.
4. When top is thickened and no visible liquid egg remains, PLACE filling on one half of the omelet. FOLD omelet in half with turner; slide from pie plate onto a serving plate. SERVE immediately.

I'm going to be trying this today. I'll be back with comments if needed.

1 box cake mix, made per instructions or adjusted per your whim. Mix, put in pyrex type loaf pan, nuke 7min pwr8, then 4min pwr6. Let rest 20min. Adjust the timing according to your microwave. Ours is 1100W. 6min pwr8 & 5min pwr6 might be reasonable to start if your machine cooks really well.

I often sub 1 brown banana for 1 of the eggs, sub 1/2 the oil with applesauce. You can add raisins, nuts, cereal, marshmallow, etc.

Great for short notice, easily adaptable. I've done carrot cake, chocolate, etc. Of course, if you make your own mix then you can control all the ingredients --

Sometimes life is too short. Eat dessert first.

Easy and quick and usually no leftovers! Living alone (84 and in a wheelchair) and preparing many meals for myself I found Starkist pouches. All I need to do is open one of these single serve packets (Tuna, Salmon, or chicken) and add it to rice, pasta, salad makings (love with avocado)and whatever veges I have on hand. Sometimes I just need a snack and fork it right out of the pouch. Not snacking on chips, crackers, chocolate (!!!!) I have found some pounds dropping off! Love it when I can eat what I enjoy and find it good for me!
