Sunday we were invited over to a friend's house for red beans and rice (so yummy). They were having cornbread with it so I decided to make my own. I started to look up actual GF recipes, but then I decided to try the recipe I've had for years and just substitute the flour with Bob's Red Mill 1 to 1 Baking Flour. It worked perfectly! Here's the recipe

Buttermilk Cornbread
INGREDIENTS:
c butter
c. white sugar
2 eggs
1 c. buttermilk
tsp. baking soda
1 c. cornmeal
1 c. Bob's Red Mill 1 to 1 Baking Flour
tsp. salt
DIRECTIONS:
1. Preheat oven to 375. Grease an 8 inch square pan (I just did this in a cast iron pan and then put the pan straight into the oven)
2. Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
3. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
