Rice Cakes are crunchy and you can put almost anything on them. They come in lots of flavors. They are low in calories. I like plain because I have to watch my sodium intake.

There are a lot of good low carb microwave recipes for MIM - Muffin in a Minute --some are on SPARK recipes website and a good many are easily found in a websearch. A lot use ground flax - some people do not like flax -- but there are 2 types that we've tried - gold or red. I think the gold is probably the best tasting, but my husband - our low carber - likes both.

Thanks, LYNALYN. I'll try your quick microwave bread recipe (that's a new one for me!) -- I have some almond flour. I haven't heard back from MDIX91 yet.

I like this simple microwave recipe for a single serving of bread. 2 Tablespoons almond flour mixed with one egg. (My own add was to use 1/8 to 1/4 teaspoon baking powder to help it rais). I "pam" or oil a small plate that drops down a half inch or so. Put the mixture on it and microwave for about 1 minute. It might need 30 more seconds, just keep watching the center for doneness. Pop it out of plate after its cooled down. If it rose enough you can cut it in half down the center for top and bottom breads. this was a recipe that suggested you could use it to make a grilled cheesesandwich.

Tumaro's and Joseph's make GREAT low carb tortillas that I use for roll-ups (and individual pizzas too). Joseph's also makes flatbread & pitas that have incredible stats!!

The time is here to make things happen!

I eat Low carb and no gluten. We make OOPSIE ROLLS. can be used as bread or even a DANISH.. can use for FR toast and anything! ANYONE wanting the recipe just ask :)

I will often use 2 low fat Eggo waffles to make my breakfast sandwich with. Eggbeaters and spinach nuked for about a minute and half, put between the waffles and go. ( I usually us Arnold sandwich thins for this, but I like to mix it up sometimes )

Buy the very thin sliced wheat bread or corn tortillias. I love the WASA toast also. Cut your portions down and you can still have some bread. Skip the dinner rolls and subs and biscuits. I am also a bread lover but we do need a certain amount of carbs everyday because that is the only thing that feeds our brain.

Everything in moderation is key. Use romain salad leaves to make your sandwich. Put the fixings inside a leaf and roll it up. They are good.
