Jicama is a type of root! Its round and brown looks kinda of like a huge brown raddish. Its very good with lemon just chopped up and makes a good little addition to salads. Very fresh light taste which is wierd since its a root. My mother eats them like apples!

It's got some great ideas! I love Mexican, so I'm glad you brought this topic up... it made me do some reconsidering.
OH! Also, I love chips and salsa, so I make sure I go slow... and heavy on the salsa, light on the chips. (Although I don't know what Jicama is that SP reccomends... anyone? I guess it's something else to look up!)

Fajitas! You get tons of protein, and some veggies, and you have control over what you eat. Go easy on the tortillas & ask for corn tortillas instead of flour, and black beans instead of refried beans (there is usually extra oil in the refried beans).

Most Mexican restaurants will offer a shrimp cocktail! They usually are just shrimp floating around in lemony water so that's not too horrible! If you dont like seafood you can always order the chicken and cheese and then eat just the chicken omit the cheese and top your chicken with Salsa or picante sauce instead. And skip the flour tortillas and ask for corn if its available or whole wheat if they can!

Whats the healthiest thing to get at a mexican resteraunt?? I never get the beans and rice I just get like a taco or a burro or somthing but I don't know what would be best?
