All this talk of eggplant parmesan made me hungry for it, so I bought a frozen one at the supermarket - Crestland brand, it had fewer calories. It had some weird mashed veg filling between the slices of grilled eggplant. Not even good enough to be mediocre, but not horrible. And I'm sure not wonderful like your dinner, Bess!

I like eggplant a lot, but don't have enough recipes for it - I had a great eggplant souffle sort of thing made by a Ghanaian woman in Liberia - but I have no idea how she made it. When we lived in Greece, we probably had moussaka once a week! YUM!!! (But the kind without the bechamel sauce on top.)

I went over to REI to get the size of Keen sandals I need, and had them order a pair of sandals that were on sale. Walked all over the store, around the outdoor mall, around a few stores, back to where I parked the car - managed to get in my couple of miles for the day.

And Donna, be glad you aren't here - tomorrow will be in the high 60s F (so maybe 14 C?) and chilly! What happened to summer??? Oh well, at least the afternoon was sunny for a while, and it never did rain.

Hi team, I'm pacing the house while hubby has a pre-dinner nap. Then we'll head to dinner and Costco.

The funding came in for my new project, so now I'm in a double frenzy writing documentation for the old and spooling up the new. I do enjoy being a project lead, though, and am learning a LOT from each go-round.

Tomorrow is a fiber guild potluck followed by errands. I'll food prep in the evening, and do my office work Sunday morning. It's going to be HOT!

I've never been a fan of Mediterranean eggplant, but I do like white or Thai eggplants. They aren't as bitter. Nowadays they are easy to find.

Bess, I wonder why they make you pay for credits you won't receive? If it's the same price, it would be worth it to write the papers and take the final, make them work for their money.

Toni, what brand of trike was it? Are the brakes integrated? It's a good thing it didn't happen while he was riding.

I'm going to snag a short nap before starting dinner.

TGIF!

Trying to catch up with everyone's posts during this busy week. I'm home today, another forced day off to keep from losing PTO time. Of course I peeked at work, there are issues but I forced myself to close out of it. There are plenty of people there to handle it.

My new glasses are in so I'm going to go for a long walk to pick those up then some lower body ST and yoga.

I was able to make my Thursday night group run last night. It's been about a month since I've been able to make it due to work. My solo run last weekend was a real struggle, I was so aggravated, feeling like I was losing my mojo. But last night, with my favorite running buddy, it was all good. Life is funny like that!

I never thought I like eggplant and then I had it my husband’s way which is delicious. He grills a bunch of veggies, including eggplants and mushrooms. He mixes the coked veggies together with various spices. The eggplant becomes creamy. Now i actively look for eggplant for hubby to make.
My mother went to college when I, the youngest, started college. The women who didn’t finish high school because of the big depression, got a bachelors in English and a masters in creative writing. She was able to do the masters for just the fees. Of course back then college was much cheaper.
Maree I’m glad you can get back to your CrossFit classes.

Morning all,
Glad you are back to your CrossFit Maree. It’s hard when our routine is interrupted. I am sure missing my aquasize too.

Bess, I would love to make something with eggplant but Dh does not like it. Sounds yummy to me. Have fun shopping today!

Toni, hope the bike is fixed without too much trouble. Good thing you were there for the rescue.

Tonight we are going to see our dgd’s Partner dance at the Ukrainian Pavillion. Yes he is one of those dancers that jumps in the air doing the splits. We have never seen him dance so we are looking forward to it.
Tomorrow we are going to a wonderful farmers market so that should be good too.

Good morning!

Yesterday was ‘glitch’ day. My DH rode his 3 wheel motorcycle to the grocery store as I started to prep dinner. Then he called from the parking lot because his bike had ‘locked’ brakes and he could not go anywhere. I left my dinner prep and went to retrieve him in the car, but we needed to wait for a tow truck so grabbed dinner in the strip mall while we waited. Then we were in the middle of a tv show and the cable went out! Still don’t know the fix, but maybe later today we will figure out these things.

Ahh, Maree - the curse and the benefits of being the bulge in the baby boom. We can still audit classes at the community college but must pay for credits like anyone else. Yippee about your crossfit class
Phebess - that soup sounds delicious!
Sunny - as did the outdoor concert.
Bea - was Michaela a family member or a foster child?
Econlady - It's a good thing I don't live near by - I'd be sniffing around your kitchen every day!
Jamirblaze - ahhhh - weekend brain - what a treat!
Donna - isn't it interesting, too, how often the best teachers aren't the best practitioners? I'm enjoying these gentle August mornings - still dim light but heading towards the cozy dark of autumn

I made eggplant parmigiana last night for the very first time. I was given a sack full of eggplants and, though I have never been a big fan of the dish, hated to see them go to waste. I often put cut up eggplants in curry but I just felt like something different. I used up a bunch of mozzarella cheese sticks in the recipe and just a very few cracker crumbs on only one side of each slice so my carb restricted DH could savor this dish. And he did. What a difference making it at home with fresh picked veggies! We will have this dish again soon.

in spite of the humidity I made sure I got in a good walk with the pups. Today we're off to the city for shopping. We spent some time making a list of stuff we can't get down here. YES! Some of it is for the studio!

Good morning! It's Friiiidaaay!

The gym should be open; the parking lot was done as I drove by yesterday, so back to crossfit class this morning. Rain in the forecast today and off and on all weekend.

My undergraduate degree is Accountancy and the calculus requirement was waived. I think I wanted to take something else--it wasn't that I wanted to avoid it. Who knows, I might take a class someday. Our community college used to offer free classes for those age 65 or older, but now that the baby boomers are there, I think they changed that policy. Seems like I always miss out on those free deals. I agree that a good teacher is a plus!
