I have a couple boneless skinless chicken breasts thawing....does anyone have a good recipe for me to use? I am getting bored with my own recipes!!

I had a WW dinner and salad, and David had the leftover Turkey spagetti from last night.
I used white meat ground turkey for the eat sauce and it was really good.

Davids' cardiologist told him to lose some weight today, to help relieve his symptoms
so we are rethinking menu's.

What's everyone having for dinner tonight?

We are having chicken fajitas with the left over chicken from last night.
Chicken breast with fresh veggies on a 81 calorie flour tortilla - Can't beat it!! Maybe throw in some fat free refried beans or fiber!!

I put a chicken in the slow cooker this morning and I will stick to white meat....no skin. Probably some Schwan's baby baker potatoes and broccoli

Tonight is pizza & computer game night. DH & I are currently playing Fallout3. Pizza is from Costco - I forget the brand, but 1/3 of the pepperoni pizza is 280 calories! I then "add" to the pizza it a total of 2 cups of veggies: onions, peppers, mushrooms, 4 black olives, 1/4 cup of sundried tomatoes & 1 tbl of freshly grated parmesian cheese. Still very low calories, lots of veggies, & yummy!

Here is a recipe from Fitness Magazine for "healified" individual White Chocolate Cheesecakes. You might want to whip some of these up for your Sweetie this evening for Valentine's Day. Nutritional info is at the bottom!!
Low-Cal Mini Cheesecakes
Makes: 12 servings
Prep time: 20 minutes
Bake time: 20 minutes

Ingredients
12 reduced-fat vanilla wafers
8 ounces reduced-fat cream cheese, softened
4 ounces fat-free cream cheese, softened
3 ounces white chocolate baking squares, melted and cooled
1/2 cup sugar
1/4 cup fat-free milk
1 1/2 teaspoons vanilla
1 egg white, lightly beaten

Chocolate curls (optional)
Sliced strawberries (optional)
Sliced kiwifruit (optional)

Directions
1. Preheat the oven to 350 degrees F. Line a muffin pan with twelve 2-1/2-inch foil or paper baking cups. Place one vanilla wafer on the bottom of each cup. Set aside.

2. In a medium bowl, beat cream cheeses with an electric mixer on medium speed 30 seconds. Beat in white chocolate, sugar, milk, and vanilla until well combined. Stir in egg white. Spoon mixture into muffin cups until each is about three-quarters full.

3. Bake about 20 minutes or until set, then set pan on a wire rack to cool 10 minutes. Remove cheesecakes from pan; cool on wire rack 1 hour. Cover and chill 3 to 24 hours.

4. Before serving, remove baking cups. If desired, garnish with chocolate curls, strawberries, and/or kiwifruit.

Nutrition facts per cheesecake: 153 calories, 4g protein, 17g carbohydrate, 7g fat (4g saturated), 0g fiber

Oh geez, I had 3 chicken strips for supper with water.

Pam,
I like to poach the chicken breasts in chicken broth, and then make a chicken sandwich
with thin slices, on my fave low cal hi fiber bread....lol

I sometimes put barbq sauce on Davids', but a lot of times I cut the chicken up and he
fixes his version of stir fry with it.

I have to keep my protein down, so I love chicken...it is just about right....

Last night it was a chuck roast in the crock pot....tonight remix.........brown rice, with gravy and leftover roast with mushrooms and onions, a side of cabbage. Can't wait.

That chicken tetrazzine is out of a box. No lie. Hamburg helper but I use chicken. that stuff is awesome. Sorry I couldn't tell ya some wonderful recipe but i'm a working worman. lol.

I served them on Idahoan Buttery mashed potatoes and with all of the wonderful gravy this makes - you don't care that the potatoes aren't real. We also had steamed asparagus

Ummm, well, I'm sick to death of cooking and had a really busy day. So, I picked up Sonic on my way home...I know, I know, I'm bad. I just had a Sonic Jr. Hamburger and a few chips...not too bad. I skipped the O rings and milk shakes that DH and my brother had.

Well---We are all eating well tonite!!
Here's what I did with that chicken:
I chunked the chicken and saute'd it in olive oil. Added chopped green onions and sliced mushrooms and saute'd a few more minutes...then added some chicken broth and let it simmer a while. Then thickened it with just a bit of corn starch and served on brown rice with green beans.
But I did kick around making tetrazini and I haven't used the ketchup and cola idea in like forever!!
Great ideas...
Be thinking about what we are eating tomorrow!

I had the 2 chicken breasts, so I poured a cup and a half of instant rice in the skillet,
added 1 and 3/4 cups of no fat chicken broth and let it simmer until we were ready to
eat which was about 40 minutes.

Tomorrow I am having salmon and rice with mixed veggies.

Shrimp tacos - been loving these lately, lots of variations with different veggies or fish instead of shrimp. Today I'm using:

Shrimp (using frozen breaded shrimp since that's what I have)
Sun dried tomato basil wraps (can use regular tortillas)
Shredded Cabbage
Shredded Carrots
Chopped Tomatoes
Squeeze of lime
Chopped Mango
Chopped Jalapeno
Little bit of light ranch (can do light sour cream)

Cola chicken: 3 ingredients: those chicken breasts you already have, 1 cup of kethcup and 1 can of diet coke. Place chicken breasts in a frying pan, pour ketchup over them, pour diet coke in the measuring cup the ketchup was in to get the rest of the ketchup out. Pour diet coke over chicken. simmer 45 minutes. the sauce will thicken the last five minutes. I serve that sauce over brown rice.

I am having Corned Beef and Cabbage tonight. Great thing about that is that I don't particularly care for the corned beef but I LOVE cabbage and my husband hates cabbage and will mainly eat the corned beef!
