that does sound pretty good Jen. Do you Saute the kale until fully cooked or just a little to soften?

I like kale sauteed with onion and garlic and then tossed with a can of cannellini beans and maybe a splash of vinegar and some salt and pepper.

I eat kale raw and cooked. I love a raw kale salad mostly massaged with hummus. I also use kale in smoothies and of course, cooked. I love the bitter taste of greens, Brussels sprouts, etc.

I put my kale in smoothies or make baked kale chips. I use the most in the smoothies then I can use the heavy stalks too.

I don't eat kale raw, it has such a strong flavor. I sauté my kale in olive oil and/or broth. If I'm using it as a side dish I'll add onion and garlic. I love adding it to stews, soups or rice bowls. Kale is a cold weather vegetable so its flavor is best during the cold temperature months, now through late spring, during the summer its not as good.

Different Dr's have different opinions on this. Dr. Fuhrman says that when it's blended in a smoothie it breaks down the cell walls and makes the nutrition more available. Best bet would be to eat some cooked, some raw. Then you can be sure you're getting the best of both worlds. I get tired of smoothies now and then, then my greens end up in soups or stews for awhile.

I got a kale recipe from DR Ben Kims newsletter. In it he says kale need to be cooked to be adsorbed the the system because of its toughness, I blend mine with other veggies will that do the same. Usually it is frozen and that softens it
