Apparently nothing got cooked this weekend. We ended up being busy busy busy. I had planned to cook dinner last night, even had bread in the breadmaker for the boys. But we ended up going out to visit with my dad and we took him out to dinner. I can now officially say that a vegetarian at Rib City does not have many choices. It was bad. Dry baked potato, corn cobbette soaked in butter, sliced tomatoes and a splurge of baked beans. I was not satisfied and when we got home and the bread came out the breadmaker I ate a slice (of white bread). Feeling kind of cruddy this am. Maybe a connection???

I'm going to be away from home 3 days this week so my weekend cooking has been downsized. I will probably still make a half batch of my 10 grain pilaf. Will likely rely more on canned beans and maybe even some canned soups this week. I have a few things that need to be cooked before I leave, but that's it for me this weekend.

Weekends are a great time to cook, because you can be home for longer periods of time. What are you cooking this weekend?

I am making the Festive Chili from Moosewood Lowfat Cookbook, along with some hearty cornbread. That should get us to Thanksgiving.

I was going to attend the vegan potluck tonight, but my flu-like cold has got the better of me, so I will have to stay home and rest. Actually, I"ll be doing everyone a favor by not being around them. I'd hate to pass this on to anyone else. It's been hanging on me in various forms for at least two weeks.

The most effective health-care is self-care.

If you can find the Mediterranean stew by Moosewood on-line, it would use up a lot of zucchini and squash, esp. if you double it.

I have a good amount of zucchini and yellow squash that needs to be cooked. I'm thinking of making up some kind of soup or stew. Something I can eat on all week long. Maybe add some barley & beans, onions, green peppers and of course garlic. Might even run to the store and pick up a head of cabbage to chop up in there.

Any suggestions?

I'm making the Mediterranean Vegetable Stew in Moosewood Lowfat Cookbook: asparagus, zucchini, tomato, garlic, cannellini beans, fresh basil and fresh oregano, red and yellow bell peppers. I've never tried it before, but I have loved all the recipes I've tried in this cookbook!

Thanks! I bought a bag of dried goji berries thinking I would like them since I like every other berry but I really didn't. I make a vegan chili that sounds similar to your recipe. Maybe I will just throw them I and see what happens. I'd like to use them instead of throwing them away.

The goji berries blended in really well. I didn't really notice them. The recipe is in the Super Immunity book and a quick web search did not turn it up. Basically it was three cans of beans, a LOT of veggies and some chili spices. And about a half cup of the goji berries. There was a full bag of frozen chopped broccoli. I then made the two additions noted below.

The goji berry stew was tasty. I added a couple of TBl of vinegar and about 8 oz of tomato sauce because I found it a little bland. Everyone who tried it, liked it, although the meaty chilis were eaten at a faster rate.

I bought the goji berries for the soup, but haven't made it yet. I baked 2 garlic bulbs today and when they were done I smashed the cloves and made garlic bread. Loved it!

Cooked one of my vegan bowls today. Quinoa, mushrooms, green pepper, onions, broccoli, lentils. I'm also making some marinated mushrooms. Tomorrow I'll make my big pot of 10 grain pilaf to last all week.

I found something new to sautee my veggies in. Garlic juice. Bought it in a spray bottle, it's incredible.

I go grocery shopping on Wednesdays so I make a big batch of something either Wednesday night or Thursday. This week I made "Lisa's Lovely Lentil Stew" from the ETL book. It looked easy and shared my name so I went for it. I found it a little bland but it makes a TON so last night when I heated some up I added some curry powder. That did the trick! Next time I heat some up I might add garlic and curry and see how that tastes.

Last week I made a vegan chili. I did a recipe blog about it. It was really good!!

Today is my birthday and yesterday was my husbands, so today we are going to a music lecture of Nina Simone and then to a Greek Restaurant for dinner, tomorrow we will attend a breast cancer event, where I am honored. I won't be doing much cooking.

I usually do some kind of big batch cooking on the weekend so I have something I can heat up for dinner after work, but it looks like I have enough in the freezer to last for at least 3 weeks so I am taking this weekend off.

I plan to make the French Vegetable Stew from the Moosewood Lowfat Cookbook. I've made it before, and it is quite good. The white wine, fresh tarragon, and leeks give it a distinct French flair. I wrote more about it under Moosewood recipes in Little Helpers.

What's cookin' in your kitchen?

I cooked between 4:30 and 9:30, off and on, and made Apple Surprise (Eat for Health vol. 2) and the French Vegetable Stew. Both were so delicious! I doubled the stew and made enough for all week. The leeks, white wine, and tarragon make it distinctively French. Very flavorful!
