I know you could find a good recipe that either doesn't have lemon juice, or just omit it. Or use Bearitos fat free refried beans and season with salsa or garlic or anything you want. I ALWAYS have them in the house, they're great for dips, sandwiches, tacos, burritos, etc!

Use hummus in the middle for dipping. You can create different flavors with garlic or roasted red peppers or onion, jalapenos - you name it, just be creative.

Someone loaned me some trays to put veggies & fruits on. I can't decide what to put in the center for a dip. One of my daughters has a citric acid allergy and all of my dip recipes call for lemon. I'm also going to make a potato salad and barbeque beans from Neal Barnards book. Maybe cookies & brownies from the E2 diet book. I don't usually cook a lot of food at once, so this is a pretty big thing for me.

Hi Wanda, thanks for the recipe link! I checked it out and decided I needed to make some, veganizing it with Daiya pepperjack and Galaxy vegan Parmesan "cheeses." I'm skipping the eggplant and adding more squash, and I can't wait to have this tonight!

When I entertain I fill the table with several fresh fruits and vegetables with healthy dips, the more selections the better. My goal is to have enough variety that everyone finds something they like.

Eggplant, Squash,and Zucchini Casserole is truly fantastic, my friends love it.

I totally second Vikki's ideas. I recently made (and blogged here about) a Roasted Corn, Black Beans and Mango salad that we loved. Hummus and baby carrots or whole grain tortilla chips or pita triangles would work. A veggie chili in the slow cooker would be great, offering vegan Daiya cheese shred as well as dairy cheese for those who'd want it (or just put out the Daiya, say nothing, and all will enjoy!), I love Vikki's stroganoff idea and have been planning to make a "beefy" dish like stroganoff or stew by using Field Roast cut into chunks and browned before adding, or Gardein Beefless Tips. Now that I feel I have "permission" to enjoy faux meats for their amazing protein content (after reading Vegan for Life by Norris and Messina), I can't wait to throw them into all sorts of good foods.

BTW, have you heard about The Betty Crocker project? Vegan gourmet cooks The Shannons are going through the BC Cookbook and converting ALL the recipes to vegan versions! Here's a link to their Beef(less) Stew: http://www.meettheshannons.net/2010/10/bet

Fresh fruit - so much is on sale right now, mangos, cherries, grapes. Of course a veggie plate. Big salad.

If you're wanting meal type food there are all kinds of soups and stews that would be a possibility. Vegan pizza. Pasta primavera, marinara sauce and lots of veggies. Mushroom stroganoff, as in beef stroganoff without the beef. Build your own burritos or tacos.

I'm sure others will come up with some ideas. Are you trying to keep it vegan? Vegetarian?
