I hope someone has some recipes that they can share. I don't bake at all anymore so I don't have any. Sorry......

But I was wondering about looking into gluten free cookies. I wonder if using gluten free flours would have as much of a spike as regular cookies? Of course they only way to know for him would be to test before and after eating a cookie to see the rise, but I am also thinking that at 4 years old, he may not understand the need, or want to allow the testing......

One final thought would be make the cookies small enough so that it would be only about 15 grams of carb max per cookie and one cookie could be a snack. Would something like that work for him?

My son came to me today and he has a co-worker who has a 4 year old son just recently diagnosed with Diabetes and he has to take insulin 3 times per day. His son was just at a friends birthday party and of course there were lots of treats there. He was asked if he would like some cake and he said that he used to be able to eat that but he cannot now and he ran to a corner and cried for the next half hour.

His favourite treat was chocolate chip cookies - does anyone have a good diabetic chocolate chip cookie recipe?
