All my kids are in Richmond BC so not a whole lot of people to cook for. My sister and I will have my brother over on Friday and we are making a slow cooker dish with chicken. Then we will have a ham dinner with scalloped potatoes and deviled eggs on Sunday with my husband (they do not get along thus 2 dinners).

We normally do a cookout & Easter Egg hunt after church with our kids at home, but sine we are on vacation to go spend the holiday with our DS & his family in WV, we will have a little cookout & egg hunt with them & then have the traditional one with our other 4 grands & their parents the weekend after.

We are going to my older sister's on Saturday. I am not sure what she is having, probably ham and everyone has to bring a dish to pass. She is always sure to have everyone's dietary needs met. My brother was on an almost no carb diet and she made sure that he had enough to eat as well as enough choices to make him happy.
The one thing that I requested was that her beau make his special dish of bacon wrapped water chestnuts in a bourbon and bbq glaze....OMG!

On Sunday my younger sister (the one that I live with) is making ham, her 'party potatoes', asparagus, and crescent rolls. She said she is going to find a whole wheat roll at the bakery that I can have too, as long as she can have my share of crescent rolls, lol!

It will be my first holiday since my diagnosis, and I plan to enjoy myself while keeping portions in check!

I will be going to my sisters Saturday night and coming home Sunday evening. She will be cooking a turkey but instead of the gravy and all the other "fixin's", she will probably make something like a quick hash brown casserole (funeral potatoes, maybe?) and some fresh veggies.
