Hi there! I actually just started using veggie broth just a couple of weeks ago after reading it in a Sparkpeople article about substitutions. Unfortunately, it doesn't taste the same, especially for Indian food. What I've been doing instead is using just a tablespoon of olive oil in a smaller plan to roast the spices and this concentrates the flavor. Then I use a bigger pan when I add whatever vegetable I'm going to make.

It's not quite the same but I have used water or veggie broth when sautéing vegetables and spices instead of oil. For cream to thicken broths etc I have used cashew milk or homemade cashew cream.

Hi SWIM4SLIM! It's true the food served in restaurants is so good, but oh my, if you knew how much oil and salt goes in there! I am working on tweaks to many recipes and I'll keep you updated. :)

MEGHNA9115: It is funny to me that you, born and raised Indian vegetarian, proclaim that making healthy and tasty Indian Vegetarian is hard to do. I L.O.V.E. Indian food. Or at least the stuff that is being sold in restaurants as being Indian. It has been my quest to find the perfect copy cat 'Indian' recipes to make them healthier, but have never been 100% satisfied.

I would love to hear those tips/tricks too! Following!

The trick to getting the Indian flavor is all in the spices. You get the spices right, no matter the vegetable, you're good to go. I hope you find the cookbook you love!

I have a cookbook with over 600 curry recipes! It's great to use to get ideas. We love using tofu also. I don't get the crisp I want all the time but it does sound like a good sub for paneer. I make seitan from scratch so it turns out to be versatile. I've never used chick pea flour but like to use brown rice flour a lot.

I may make a spinach curry tonight! I'm getting hungry LOL!

Walking, Vegetarian, Meditation, Yoga, Reiki, Chakras, Crystals and fun of course... Just a few of the things I'm interested in. It takes time to balance it all but it can be done.

My concern is oil and salt. I love salt too! I'm great on BP but salt is still bad. Roasting helps. I've been using ceramic on medium a lot lately, It gets pretty hot and I can use less oil then. I don't really use a lot of seitan but I do use tofu as a sub for paneer. My family is from the Gujarati region of India so we use a lot of plain yogurt with chick pea flour to make lentil soups. I should try grilling more!!! Such a great way to get in more flavor!

I love veggie Indian food. Is your concern using oil for the spices? My biggest problem is adding salt "to taste". I'm a saltaholic with high BP. Great right?

I usually dry roast my whole spices in a non stick pan. I'm sure you know 100 times more than I do about cooking Indian food.

One of my faves is making seitan and using Indian spices then grilling it. Do you use yogurt?

I'm Indian and have been a vegetarian my entire life. I love to cook all types of cultural foods but making healthy and tasty Indian Vegetarian is hard to do. Most of the flavor comes from the spices you initially cook in the oil. I'm working on creating traditional Indian recipes that can be healthy and still tasty. Would love it if anyone else has tips to add/share.
