A fast and easy meal whole wheat pasta with sesame peanut sauce. On the side squash or any vegetable that you would like.

My new favorite takes a little time but it's a very easy one-pot meal: a couple of cups of either quinoa (makes a lot) or rice blend (my favorite) prepared and then mixed together with one little box of the Pacific Cream of Mushroom soup (very tasty and healthier than Campbells), one can of white beans (drained) and a bag of frozen mixed vegetables (thawed out), and then season with lemon salt.

You could save a lot of time by using Minute Rice, but it's not active time and the wild rice blend gives a little color and texture. I'm single and I get 4 meals out of this.

I always have beans cooked so if I want something quick it will be a bean burrito or beans on toast. I often have a green smoothie for breakfast. None of my recipes take long to prepare but these are the quickest.

there are a lot of easy meals in the recipe files of SP. I especially like the mediterranean salad, The Apple salad with Chia dressing is great. I add lettuce, tomatoes, red pepper and just about any other vegetable that you would like to add to it. Makes a great lunch.

Greens: kale, chard, collards, turnip, beet, dandelion, bok choy, napa cabbage,... Alone or in combination. Lightly steamed, then quickly sautéed in coconut oil and sesame oil, with tofu, ginger, garlic, and chilis. Braggs, Siracha, and nutritional yeast on top.

Raw kale salads with lemon juice, lime juice, avocado, sun dried tomato or fresh, soaked sunflower seeds, artichoke hearts, capers, balsamic, walnut oil....

Blended green drinks with kale, dandelion, chia, lemon juice, lime juice, ginger, apple, banana.

Miso broth.

Raw cabbage salad with walnuts, apples, raisins, dried cranberries, balsamic, walnut oil.

Carrot sticks with a nut butter.

Bean burritos

Spaghetti with marinara sauce (from a jar, but it's also easy to make)

Chips and guacamole and salsa

Sandwiches (including veggie burgers)

Peanut noodles (cook noodles, mix together peanut butter, soy sauce, a little water, and if you have it some ginger and garlic. add to noodles)

Kimchi soup (stock or water or tomato juice; add kimchi and optional onions. optionally, add cooked noodles. serve)

Big salad

Boiled potatoes. They're nutritionally great, and sometimes I just eat them alone.

Hummus and pita

Roasted root veggies

Easiest chili ever: one can each of beans, corn, olives, and diced tomatoes. Add a chopped onion, a chopped pepper, and up to a tablespoon each of chili powder, cumin, and granulated garlic (to taste). Cook for 15-30 minutes at a simmer.

Soft tacos: Heat corn tortillas and top with whatever. I usually do mashed pinto beans, lettuce, tomatoes, onions, salsa, etc.

I'm not eating meat, but I am still stuck in a rut with eating. What are your favorite EASY meals? I avoid dairy (and eat soy yogurt because it has more protein)... but I'm not vegan strictly
