Hi. Making meals from scratch is the way to go. Somehow, we, the industrialized, Western world, got off track. Maybe we, the post-industrialized world, will get back on track.

It sounds harmonious that your husband is so supportive of you. What a beautiful thing.

Your job exercising with the fit also sounds attractive to me. Just take care to find your own pace and not try to keep up with the others. Structured movement on a regular basis keeps me sane and I find it really fun, too, and undesirable, difficult even, not to do. Watch the fat, especially with nuts and seeds and oils. I am a low fat organic vegan. I prepare all my meals. It works!

The only super powers I want are Kindness, Gentleness, Patience and Peace of Mind.

Hi, I'm not "new" to the board, but I never introduced myself, and I've been absent from the site for...a really long time. I'm vegan (obviously). I stopped voluntarily eating meat when I was probably 12. I state voluntarily because my mother did not agree with this lifestyle choice, and was very clear that I "eat what she fixed or else." Realized that dairy makes me physically ill when I was around 15, and spent quite some time convincing my mother of this. Went vegan the day I moved out of my mother's house, and have been happy vegan for the past 10 years! I have tried to be a more conscious, healthy vegan in the past several years. My husband (not vegan or even vegetarian) is completely supportive of me (and I adore him for this), and he happily eats whatever raw/vegan food I sit in front of him! He also goes out of his way to make vegan food for me. He's my biggest supporter, and I don't know what I'd do without him!

I live overseas for now, so vegan has taken on a whole new meaning. I have to make more of my food from scratch, because vegan "prepared" things just aren't available here. This has led to a MUCH healthier diet for us, and I do not see myself going back to processed foods when we go back to the states. Vegan or vegetarian restaurants are virtually nonexistent here, so I tend to cook all of our meals from scratch, and take them with us!

Portion control is my enemy, especially when my hubby is away (he deploys frequently). I just got a new job that requires me to exercise with people who are FAR more fit than I've ever been, so hopefully this will encourage me to get up and RUN! Any support or suggestions or virtual friends are thankfully accepted! :D Take care, and have a peaceful day!
