the mug cake mug cakes and you will find lots of flavors..dump it out of the mug and fill and frost it and you have a cupcake on steroids!!
or, just halve your cupcake recipe to make 12 instead of 24, put them in the freezer unfilled and unfrosted and take ONE out when you have a craving!!

I had herd of a recipe that you cook in a mug. It is done in the microwave. It I believe is small batch. Also... many microwave recipes make smaller batches of 6-8. Maybe it might be something to check out.

Here is a link to a recipe for a cake in a mug...

Here is also a recipe for a small batch of cupcakes made in a regular oven...

I hope this helps you...

My name is Kate and I'm a cupcake addict. I love filled cupcakes with deliciously-flavored frosting, but unfortunately I just moved away for graduate school and have no excuse to bake full batches anymore. School hasn't started yet so I haven't met anyone to share them with, and the plethora of goodies in my apartment would just be too tempting. I'm so glad that I can gain encouragement in my get-healthy mission from others with similar interests. And maybe some of you have small-batch or less-detrimental cupcake recipes to share. :)
