Vegetable soup tonight! I made another big batch, and half of it's in the freezer. emoticon

My DIL taught me to bring it back to a hard boil for a few minutes. She's from Central America and they never had refrigeration in their home. You just cooked things fresh and kept the pot of beans cooking on the stove. They just reheat it and eat out of it until the beans are down to mush and ready to fry.

Well... I didn't taste it at all. Guess I've always just tossed anything left out overnight, erring on the side of caution.

We're just getting to the chow mein tonight. Glad I got the eggrolls made the other night. Enjoy the wedding!

Did your soup go bad Tina? If mine is too hot, I don't put it in the fridge, either, but it doesn't usually spoil over night.

We're going to a wedding today, so I'm not sure what we'll have for dinner. I just know that I'm not cooking! Turkey soup with homemade noodles will be on the menu soon.

I made that pot of soup-- a huge pot! And then forgot to put it in the fridge for the night. I was so bummed! I'll have to make another one. I was looking forward to it for lunches!

Tonight it's homemade eggrolls and beef/pork chow mein.

Lily, are you talking about the wheat berries? I get them from the bulk food aisle at my grocery store. The wheat berries make the dish really chewy and I've come to enjoy the texture. It helps when I'm trying to cut back on the meat because it gives me something else to chew on. :))))

Terri, That sounds yummy! Where do you get the berries?

I like rice, my family is not into it that much at all!

I got Mark Bittmans cookbook out of the library! (You can find him and many of his recipes online) I am having fun trying them and the family is enjoying( they are healthy)

So I go from healthy and different to comfort and familiar! LOLOL It is hard with being out of the house all day, but I am working on it... I already miss not having the fresh veggies at my fingertips! I Loved being able to pick my lettuce everyday! I will have to revamp my schedule and get lettuce more often at the store. I just opened a box and yuck.. It wasn
t that old!

I agree, Tina. Chutneys too, I think were a way to preserve the harvest a little bit and to dress up meat dishes. We have so many ways to season our meat now, that we don't use the old-fashioned things so much. There are hundreds of recipes and combinations to make and they each have their own use. Some are sweet, some are savory.

The zucchini relish is just like hotdog relish--at least my recipe was. There's also a green tomato relish that is very similar, only more tart because of the tomatoes. If you've got any green tomatoes left in the garden, look up the recipe.

Thanks for the tip on the relish! I was thinking it was for on meat or something. I know there are tons of relish recipes out there, but wasn't sure how to use them. emoticon I was thinking of looking up the history of relishes; I was thinking they were a way to make sure there were some veggies available 100 years ago without stores. Kind of like all those flavored vinegars--I have no idea how to use them!

We went to the MN Teen Challenge dinner/auction tonight. I had the best walleye! A thin crunchy crust. Yum!

I'm making some right now, Tina. I didn't have anything planned for dinner (lazy day today) and decided to make stir fry again. I've got the grains cooking, the veggies cut up and took some shrimp out of the freezer to thaw in cold water.

I've made that zucchini relish! It's a sweet relish and my family doesn't care for sweet pickles--but I use it in macaroni salad or tuna salad. They don't care if they don't see it! Haha!

I really do need to try your pilaf! Sounds good! Last night we had tator tot hotdish that was leftover from the Wednesday night church night. Something I never make.

Yesterday I made some zucchini relish. A friend had given me some giant zucchini her dad grew, and I'd thought of trying the recipe last year, so pulled it out. I plan to give little jars to my family at Christmas and will give my friend and her dad each a jar, too. Can't wait to try it! Put it in little jelly jars. Green with bits of red bell pepper.

I'm glad you revived this thread, Tina. I'm sure I won't be any help with your picky eater--mine will eat nearly anything I put in front of him.

I've been making a rice/grain pilaf by using 1 cup each of brown rice, barley, wild rice, and red wheat berries. I just make up a pot and keep the leftovers in the fridge for throw-together meals. Until recently, we've had so much yummy stuff coming out of the garden that I've been sautéing a bit of meat (chicken breast or pork loin) in sesame oil and then adding cut-up veggies (bell peppers, carrots, broccoli, chard, mushrooms, etc.) with some kind of chinese sauce (hoisin, oyster, or just soy sauce). Serve over this rice and it's really good.

I love meat, and this grain mixture is chewy enough that I can cut back on the meat and not miss it.

Okay ladies. I'm ready for fresh ideas in my kitchen! What's cooking in your kitchen?

Hmm. I made chicken pot pie two nights ago. Dh isn't into it, but I guess that's two times in a year. Wow!
Last night was spaghetti and salad. I made my first basil pesto; the kids and I liked it, and some last minute visitors tried and liked it too. I made a red sauce for dh, my picky eater. :P

Tonight will be meatloaf, creamed corn, salad, and baked potatoes. Think I even have a sweet potato in the drawer.

For indian food, you have to be able to stand a little heat and alot of spice. Typically, theres cumin, coriander, ginger, garlic, and tumeric in just about every recipe I have. I love it but it's too many tastes going on for my husband and older son.

Here's a salad that we use all the time as a topping for fish tacos. I stole it from Rick Bayless:

Jicama-Mango salad

1 jicama
1 English (seedless) cucumber
1 mango
1 lime, juiced
chili powder

Peel and cut the jicama into match sticks. Cut the cucumber into match sticks. Peel and dice mango finely. Toss the jicama, cucumber and mango together then toss with lime juice and chili powder to taste. Let set 30 minutes for it to come together (although you can eat it right away if you need to.)

For fish tacos we just poach or grill whatever fish we have. Then we break it up. We load flour tortillas with fish, salad and an additional wedge of lime. Corn tortillas would be good too but my daughter is allergic to corn.

Dh and I were invited to a big dinner tonight, so we had chicken enchiladas, refried beans (I don't want to know if they weren't fat-free!), rice, some taco meat and fixings, and a square of some apple flavored cinnamon topped pastry.

Ran all day to various library programs and tonight is hockey so I made a terribly complicated meal. I had to take the lid off the crockpot, turn it on, rip open 2 bags of frozen green beans, dump in a bit of garlic and onion, microwave some chicken sausage enough to get them out of the package, dump them in the crockpot and turn it on. Whew, just exhausted thinking about it! ROFL!

Actually, it's pretty easy and a good meal for under 200 calories for 1 sausage and a cup of green beans. I get these sausages from Costco. They have various flavors but I think this one is chicken/apple. 110 calories and no preservatives, MSG, nitrites or HFCS.

My gang never did go for the ww pasta. I've switched to the multigrain pasta instead. Have you ever put spaghetti squash under your sauce? Kind of sweet and adds a bit of crunch.

Adoptmom: Sounds good--and healthier than last night: we had brats, coleslaw and baked beans. At least the brats at this meat market are dry.

Tonight is swedish meatballs, mashed potatoes and gravy, and peas. Think I'll open some canned fruit for dessert.

Tonight will be eggplant parmesan and whole wheat pasta. (I finally got most of the children eating and actually preferring the whole wheat pasta...FINALLY)
