Oh that sounds delicious! Yum. I will have to get some eggplant and try that. Eggplant is something I rarely cook with. I should though, I do enjoy it. Yum.

I just made this up tonight:

Eggplant and Ravioli

1 med to large eggplant, cubed with skin on
2 cloves garlic, coarsely chopped
2 slices bacon, chopped
1 med bell pepper, cut into pieces that are approx same size as cube sides
1 can diced tomatoes
1 can tomatoe sauce
2 cups fresh spinach, coarsely chopped

Saute garlic in 1 - 2 Tbls olive oil with bacon, add eggplant when garlic starts to soften. When eggplant darkens add the bell pepper. When the bell pepper is slighly softend add the diced tomatoes and sauce, bring it to a simmer and cover the top with the spinach. As the spinach wilts mix it into the sauce. Turn to low.

As you are cooking the sauce, boil water and throw in enough raviolis for 4 people. Drain and serve into bowls, topping with the eggplant sauce. It was yummy!

Hey, Everybody!! I just remembered another of my favorite Veggie Recipes!! And it's Healthful!! I just entered it into SparkRecipes, but I'll post it here, too...

Ingredients

Cabbage, fresh, 1 head, large
Olive Oil, Extra Virgin, 2 tbs
Salt, 1 tsp
Garlic, 2 cloves
Onions, raw, 1 small
Water, 1 Cup

Directions

Wash & cut up cabbage into managable pieces. Put into deep, oven-safe dish. Add olive oil, salt, garlic and onions. Pour water in dish and cover entire dish with alluminum foil. Bake for about 1 hour. Makes about 10- 1/2 Cup servings.

Number of Servings: 10

That sounds delicious! I will have to try that some time! mmm. I love topping baked potatoes and get tired of the same thing each time... especially when trying to be lower fat.

I just realized I had a veggie recipe that's healthy!! I don't use it often, though, so that's why I didn't think of it before now. Anyway, we're going to have it for supper tonight.

Fajita Potatoes
I use a package of stir-fry veggies from the freezer section and stir-fry them in a little bit of olive oil. Then I add in the leftover chicken from the last chicken dish I made. Season to your taste with salt, pepper, mexican seasonings or steak/poultry seasonings. Top baked potato with a little butter/margarine and the stir-fry mixture. Voila! Fajita Potato!!

Ahh, now I can get my points for this one, lol.

Just had a yummy lunch... so I had to share.

I sauteed some diced onions and diced zucchini and sliced mushrooms in a tiny bit of water instead of oil.... they keep releasing liquid so you need very little. I added some garlic after a bit and then after the zucchini was starting to get soft, a large can of diced tomatoes, drained. I seasoned with lots of fresh basil, some oregano, and more garlic... to your taste and simmered. I served this over pasta... but it would be great over chicken or rice or as a side dish by itself. I sprinkled just a bit of low fat mozzarella over the top. It was sooo yummy.

Super low fat and lots of veggies.

Ooooo, I was going to wait until tonight.. but one came to mind.. and I am posting it while I think of it... one I love... a soup, but not your ordinary veggie soup...

Acorn Squash Curried Soup

1 3/4 pounds butternut squash
1 onion, chopped
2 garlic cloves, minced
1 tablespoon vegetable oil
1 tablespoon all-purpose flour
Salt to taste.. approximately 1 teaspoon
1 teaspoon curry powder.. or more to taste
1/8 teaspoon cayenne pepper
5 cups chicken broth
1 bay leaf

1/4 cup minced fresh cilantro


1. Cut squash in half lengthwise; discard seeds. Place squash cut side down in a greased or foil-lined baking pan. Bake, uncovered, at 400 degrees F for 40-50 minutes or until tender. When cool enough to handle, scoop out pulp; set aside.
2. In a large saucepan, saute onion and garlic in oil until tender. Add the flour, salt, curry powder and cayenne until blended. Stir in broth. Add bay leaf. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; simmer, uncovered, for 20 minutes. Discard bay leaf.
3. Add squash bit by bit, blending with an immersion blender.
4. Serve with cilantro on top... and maybe fat free sour cream

This is even better the next day reheated. YUM




And I LOVE grilled veggie sandwiches... fill a whole wheat pita with some grilled sliced yellow squash, zucchini, and red bell peppers... maybe add a bit of low fat mayo that has been mixed with some garlic... maybe add a little cheese, like feta.

Or use some of the same veggies and some tomatoes and put it on low cal bread and grill the whole sandwich with a slice of low fat cheese like provolone or swiss. MMMM maybe with some whole canned green chilis. yummy.

Shawna, raw veggies are GREAT for you... and veggies soups is a great way to get in a lot of veggies.

I guess I ,do not struggle with veggies, not really. The main problem is on lazy days. Last time I did sparks I struggled to get in 4-5 servings of fruits and veggies a day... and now it is more common for me to get in 6-8.

Tonight we will have jalapeno encrusted tilapia with brown rice, containing peas and carrots, and topped with sauteed mushrooms for hubby and I, with a salad.

Yummy veggies.

I love almost any veggie grilled or sauteed. Except brussel sprouts. Yuck. lol. I will probably post more recipes tonight. Yummy. :)

Well,,, I actually eat them out of a can with butter or bacon grease and salt, pepper, garlic, onion or whatever goes good in them. Or I eat them raw alone or in a salad. Or I count the tomatoes in tomato based recipes. I also eat chili and veggie soup for veggies.

The only vegetable recipes I have make the vegetable LESS healthy, not more healthy, lol. I have several favorite veggie recipes, just not healthful ones...

There is a great Zucchini Lasagne recipe on SparkRecipes that I love to make. I just don't cook the noodles ahead of time & it turns out perfect.

Wow, you must be good at veggies, jumping right in! :)

My mom lent me one of those grills... I've been wanting to have dh grill veggies--don't think he would. I'll have to try that! I'll have to try that!

I really love carrots roasted. I've heard of roasting lots of veggies,too, but they've always been a last minute item for my family--"grab a can of XX"!

Zucchini and Tomatoes
Ingredients:
4 zucchini, cubed
3 tablespoons chopped fresh dill weed
ground black pepper to taste
oregano to taste
1 tablespoon margarine, melted
2 large tomatoes, sliced
1 tablespoon chopped fresh basil leaves
3/4 cup grated Romano cheese
Directions:
1. Preheat oven to 350 degrees F. Lightly grease a 2-quart casserole dish.
2. Place zucchini in a pot fitted with a steamer basket over boiling water. Steam 5 minutes, or until tender but firm. Transfer to the casserole dish. Mix the dill, pepper, and margarine, and stir into the casserole dish, evenly coating zucchini. Layer tomato slices over zucchini, and sprinkle with basil and Romano cheese.
3. Bake 30 minutes in the preheated oven, until bubbly and golden brown.


Veggie Kabob
Marinate veggies in light italian dressing. I use onions, mushrooms, cherry tomatoes, zucchini, red or green peppers.
Put onto kabob skewers and either cook on grill or bake or broil until down. (I don't have an exact time because it varies with the different temperatures I cook it at, depending on what else is in the oven.. or broil for 8 minutes, turning once.)

I REALLY like grilled veggies, and I use my george foreman little grill for this as often as for anything else.

I love fresh sliced tomatoes topped with fresh dill. YUM.

Feel free to share more than 2 recipes, too. And if you've got some quick ideas you don't really feel are 'recipes', share those, too! This is one of those areas I really need to get better at! Fruits you can just grab and go, but I just won't do that with veggies somehow... emoticon
