JIMK1980,
A few other remarks. Carbohydrates, and the blood sugar rollercoaster ride that they put you on are very addictive. To avoid a blood sugar low one eats more carbs, with raises blood sugar, which gets an insulin reaction.

Insulin stores away excess carbs into body fat. It also locks up existing body fat. You are in storage mode. You just keep eating more carbs to raise blood sugar. It does take a few days to break that need for carbs as your main fuel source.

You can either ease into Keto by cutting carbs each day over say 10 days, or you can just cut to like 30 a day and face the shock. That might be the nervous part. Easing in might be a bit like a smoker cutting down on how many cigarettes they have in a day.

JIMK1980,

welcome. When starting Keto I suggest you not worry about calories, not for the first week or two anyways.

Don't be nervous. There is nothing in carbohydrates that your body really needs to function well. The purest carbohydrate, sugar, shows this the best, have a look here:

Dial the quantity of sugar to any amount it lets you. Look at all the zeros of DV (Daily Value percentage). Even a cup of sugar provides virtually nothing, except 2% of Riboflavin, and one other mineral. But who can eat 50 cups of sugar to get 100% of the daily needs of just Riboflavin. This shows you how nutrient poor sugar is. All those zeros.

All carbohydrates are really like that. They may come with other things you need, but themselves are very "dead".

As for being a picky eater.... I understand. Before Keto I too was somewhat picky. After about 3 months of Keto my taste preferences changed. It was hard to admit that I actually liked zucchini, or even cucumber. I hated cucumber all my life.

Holly (NIGHTSTARSKY) has excellent advice on very packable foods that are Keto friendly and easy to eat on the run. My on the run favourites are indeed single wrap cheese sticks. There are so many types, old cheddar, mozzarella, gouda ... Also various pepperoni sticks and sliced meats.

absolutely!!!!!
i take string cheese. chunks of summer sausage. hard boiled eggs. pepperoni. chunks of other cheeses. you can pack them in a lunch box with an ice pack,.
My mom is the queen of food pushers...and i just smile and say no thanks i have an egg..or i have cheese and pepperoni, etc. Shes actually even getting better! (shes 87...not gonna change her now)
you can take low carb biscuits or cloud bread if you feel the need for that stuff. make crackers out of baked cheese (yummy!!) make fat bombs to have a treat. you can have dill pickles and even sugar free bread and butter pickles. celery and cucumbers if you want..just have to limit them.
there are a bunch of ways to stay keto..at christmas Aldi had these wonderful packages of beef sticks...one of those held me hours. i bought a bunch and have one package left..zero carbs, taste great, i'm sure there are other brands!!
you can do this...feel free to sparkmail me if i can help. James is a wealth of information and very helpful (plus a nice guy!) Everyone here is great!!!

Good morning everyone! I am Jim, and just heard about this diet. I'm an EMT with a very busy county ambulance service in NW FL. I am morbidly obese and am in need of a life change. I am EXTREMELY picky in the foods that I eat thus the reason for my size and no weight lost. I have MANY questions about this diet and am open to change.

In EMS, our eating patterns are often dictated by our call volume. So, I need to figure a way to pack snacks and meals to stay on track with this diet.

Is this diet doable?
