Don't write off those veggies you've never liked, until you've considered them roasted (in coconut oil, or with bacon fat) or covered in cheese and/or butter. I spent YEARS as a vegetarian, and love my veggies so much better now keto-style. Fat them all up!

For me it is good I don't exactly trust doctors or I would have not been doing my own dietary experiments, long story just know I will never trust doctors and my GP know that.

Yup. Sometimes we are our own lab rat, intentional or unintentional.

I once found my blood sugar too high one morning, after the previous very low carb day. Then I went over exactly what I ate in my journal, still puzzled. Upon looking at the 5 Atkins bars I ate the day before, I realized that the 2 grams of net "Atkins" count, the real information was on the nutrition label, about 18 grams per bar.

So rather than 35 grams of carbs, I really ate 90, and that was too much for me. So I know my tolerance, due to an unintentional experiment is less than that.

James, yes my daughter needed to lose the weight and more. I started getting hives from gluten a few years ago, suffered for almost a year before I figured out what was causing it, the many doctors I went to did not figure it out and to be sure once I got the gluten out of my system and the hives gone, I on purpose ate a meal with gluten and the hives returned. Even my doctor agreed and after all this time if I eat to much gluten, I get hives. So it is easier just to eliminate breads, pasta and grains with gluten. Going low carb, taking out other sources of carb, rice and such seems to be beneficial for being diabetic.

I think for me once the kids move out it will be even easier, in the meantime all the bad stuff is not in the house and is forcing my daughter to eat better. She is 28, hopefully she will learn a few things over the next few months. As for me, being a widow, when the kids do finally move out, I only have to worry about meals that meet what I want and need to be healthy.

Thanks for the links, will check them out. She is a hard nut to crack when it comes to making changes to food choices. But, I can make changes over time and once she sees results that is hard for her to argue with me about the benefits.

great numbers for blood sugar! With your doctor being happy and lowering medications ... you are on a path to better health, clearly.

You know, to some degree Keto is a fad diet. It is not your normal fare. But the thing is the normal fare is fattening people up and making them sick, and medication is just a bandaid on that. A few folks are gluten sensitive, but most are not, so there isn't much reason for most of us to avoid gluten. But in the case of carbs, far too many of us are overweight, so there is a reason to avoid them.

I myself am a retired physicist. So I'm very mathematical, very analytic. When it comes to the human body and nutrition and health I study it like science. For example I've even looked into the ideal amino-acid proportions in various protein sources. A protein is a chain of amino-acids, and digestion cuts the protein up into its amino acids. Whey protein from cows milk has an almost ideal balance for humans. Meats are pretty good. A number of plant proteins are "incomplete" in that they are out of balance, not giving you enough of one amino acid or another. I'm convinced that this is why vegetarians mix their protein sources. A practical result of better health, but under the covers mixing certain sources of vegetable proteins leads to a better balance, and better health. I don't think they knew about the amino acids when eating beans and lentils together, but that is likely at the core of it.

So I've thought about this pretty deeply, and I'm absolutely convinced that carbohydrates are a common source of energy for people, but is of no use to maintaining or building a healthy body. So if you get enough structural stuff from the fats and protein that you eat, then the carbs on top are extra energy, and the maintenance of your body has already been covered.

Did your daughter want to loose weight, or need to loose weight? If so then loosing 20 was a good thing.

One thing I've done for guests at my house is to cook one dish with carbs that I would never eat anyway, like say rice. I don't make mixed dishes, like rice with vegetables, no, rice alone and vegetables alone, that way I can eat the vegetables. Maybe this separation will work for you.

Search for the word "essential" on that Wikipedia page and you will find this sentence:
"Carbohydrates are a common source of energy in living organisms; however, no carbohydrate is an essential nutrient in humans."

In other words, just energy, no help in maintaining a healthy body, and not required by humans. I hope she sees those two articles and stops fretting about not eating nutritionally empty, high carb foods.

Things have been going well, got my results back at my last doc appointment and my A1C was down to 6.0 and my bs for the day was 79. All my triglycerides and stuff were in normal range, the doctor was happy and lowered one of my diabetes meds.

In my case my daughter is afraid of giving up her carbs and if I don't eat them, she does not eat them because they are not in the meal. She lost 20lbs were I only lost about 10. Then again she is 28 and I am 61, weight loss will come harder for me. She still does not see the point to eating low carb, but I continue. She sees it as a fad, not a lifestyle, then again she see my gluten free as a fad and she knows darn good and well gluten causes me to get hives. She was recently diagnosed with psoriatic arthritis I can not get her to understand what she eats will have an effect on her pain and inflammation, she still has a lot of growing up to do.

Yup. You are the paying customer, so you should have control of what you get. If they can't make some minor adjustments, then you'll go somewhere else.

I do the same thing. I eat at Wendy's now and then. The first time I ordered a burger with no bun I thought I'd get strange response, but they put it in a plastic box without batting an eye. I suspect they get that request often enough. So it is only a matter of how many patties of beef. I love it.

I don't understand why your daughter would be in anyway unhappy with your requests for modifications to the menu. It is for your health! If anyone ever (and they haven't) challenges me on the modification requests, I tell them I'm a type-2 diabetic and carbs are bad for me blood sugar. That also helps with deflecting food pushers.

My cousin tried to push a piece of pie on me at a family event, "aw one piece wouldn't hurt...". Well what almost hurt was the ugly scuffle after that when I told her that every piece like that will kill me slowly, and she shouldn't wish that on me. I was blunt, probably too blunt, but it touched a nerve.

Thing is, I am a type-2 diabetic.

Pretty much that is my plan, no bun if it comes with a bun and trade any carb side for a green veggie. I am prepared for a look of whaaaat, but willing to stand my ground. My friends do not do fast food, but good to know places like Wendys will leave the bun off if asked. My daughter has been frustrated with me as the last time we needed to eat when out shopping I just said lets just stop at the local waffle house, I knew I could get an omelet, easy peasy. She was not happy at first. For me at least for the most part it was meeting my goal.

Ah, restaraunts.

You know what is in your "OK to eat list", great.

I must say that when a menu says:
- rice or potatoes or pasta
- your choice of broccoli, cauliflower, small side salad

...or something like that, I find that if I say how about no rice, potatoes, or pasta, but a second veggie choice in its place, they are always accomodating.

I never have a problem. Even at Wendy's. You can order a bunless burger (I usually take the double patty kind), and a small side salad. They deliver the innards of the burger in a plastic box.

I know rice is not going to be in my food plan, can not imagine how I could eat it and stay low enough in carbs. This past week has been easy enough, the challenge will be this weekend as I go visit friends and we usually eat out, but knowing that and what restaurants we usually go to, I have a few items in my head that I think I will be able to order and stay on track. I refuse to step on the scale yet, I know I will see results first when my jeans at too big, then I will look at the scale, I know otherwise I will be disappointed in the scale and be tempted to give up. Right now it is easier for me to just count carb, the net thing just to much calculating.

My real goal is to eat 30 grams a day of carbs, or less. I don't count fibre, others do, but not me.

Some days I'm over 30, but even on a high day 50 would be quite high. However I don't carry a scale with me, and I don't weigh and count and calculate, except every now and then. Of course if one is new to Keto, then accurate tracking is really helpful.

But when it comes to carbs, then with few exceptions (like very small tastes of things) I stick to things that have 6% or less of their weight as net carbs.

On that scale:
- cooked rice (28%)
- mashed potatoes (16%)
- broccoli (2.3%)

Of course nobody likes all vegetables, and from the low carb vegetables nobody will like all of them either, but still there is quite a good selection down there, because almost all vegetables are 6% carbs or less. Few are higher.

Thanks for that James, being diabetic, sugar was gone years ago, so now all I have read, I will have to limit even artificial stuff. White flour (bread products had to go about 2 years ago when I became gluten sensitive, I get hives when I eat gluten, for me gluten free also means more calories so I gave up eating gluten free substitutes. So what was left was rice and potatoes and this past week I have managed quite well. I know there are other veggies that are one the high side of carbs and I did find a carb count booklet that I can slip into my purse so when I grocery shop when not sure I can look it up or go out to eat.

There are several veggies I will not eat that I have never liked even as a kid and at age 61 I am not going to change my mind about them now, but honestly there are enough others to keep me going and we have always been a lots of green veggie eating family.

My personal Keto plan is to not buy (and of course not eat) anything that has more than 6% of its weight as net carbs.

Net carbs means carbs, but not counting fibre. Carrots for example rate 7%. Oh, I might have a taste of carrots, but a very small spoonful. Things that absolutely don't make that cur are:
- rice
- potatoes
- pasta
- sugar

Things that do make the cut:
- any meat
- coloured peppers
- cauliflower
- broccoli

I either read labels while shopping, and have a calculator with, or for things like zucchini, which have no nutrition label, I go to the website nutritiondata:
nutritiondata.self.com

I search for the food on that site, set its quantity to 100 grams, then read off the carbs.

Hello, I have been trying to get this weight loss reignited with not much success and have decided to give getting my body into keto a try.

I had great success a few years ago with weight loss, stalled and have had trouble getting off that plateau. I am certain I will have need of suggestions and ideas for meal plans.
