Welcome to the team! You sound like you were quite adventuresome at one meal. I usually do not have enough time to try everything new, so I usually have a grain and/or salad that I already know is easy and good.

The meal turned out awesome! It was a treat for everyone. I ended up changing the meal a bit. (which made it a little more healthy).
I first had on the table for everyone's spot, a small plate, with a parmesan bowl on it (you can make these in the oven inside regular size muffin pans, or cook one at a time on the stove in a pan. cook the first side for 4 minutes, then flip, cook for 30 sends, then pull off pan and drape over a cup or bowl and allow to cool their until hardened).
In the Parmesan bowl I shredded up some lettuce, and sprinkled on top a little bit of cheese, a pinch of green onions, a slice of red bell pepper and I had cilantro leaves decorating the plate around the bowls. I also peeled carrots into long thin strips and wrapped them around the green beans and garnished the plates with them as well.
After we were done with the salads, I then served us lemon pepper chicken (I had cut chicken breasts into slices, place them in a crock pot, added a little broth and lots of lemon pepper, paprika...and I don't remember what else, but it was awesome!) and I didn't have time to make the potato roses. I got as far as slicing them and boiling them, but didn't have time left after that so instead, I put a small coating of oil on them, then coated them with tons of paprika, mustard powder....and I don't remember what else, then I baked them. They were really good too!
Afterwards, while we played Uno, I baked us some smores. I am proud to say, I only ate one :)

Hi emoticon and welcome to the team!! To answer your first question, the challenge is really whatever you make it! Some people have a book and try to cook at least one recipe a week (sometimes more), some have a couple books they cook from and either have a set number they're working towards or an unlimited amount...some are working through a website or series of books, i could go on, but I think what it comes down to is you choosing something that you would find fun and inspiring, then you can make up your own guidelines/rules and just start cooking!

and ohmygoodness does that meal sound AMAZING!!! I want to go run out and get some Parmesan just to make those little baskets :) How did it go?

Hi everyone. I don't really know what all to say about myself other than I love to cook! I have several cook books that I skim through here and there and will occasionally use a recipe in, but I have never actually sat down and worked on going through an entire cook book over the course of a certain time. This is quite a challenge and one I would love to take on.
I am curious how you guys go about this task though. Do you choose to take 1 recipe a week out of the book? Cook from it almost every night until you get through it? Just wait until you need a new recipe and then cook what is the next recipe in the book?
I would love your input!
Tomorrow, I will be cooking quite a fancy meal that I am excited about. We have friends coming over and my husband and I will be meeting the wife and kids of his newest band member tomorrow. Since, being a wife myself, I must "show her up" (I get competitive, but in a friendly way with out others actually knowing that I'm trying to out do them, it's more to prove it to myself and it makes me feel better about what I'm doing because I know I put my best effort!).
Here are my plans for dinner:
Appetizer-Parmesan "baskets" (put some parmesan along the walls and bottom of a mini muffin pan and bake in a hot oven for a few minutes. Remove from oven and allow to cool and harden before removing). In the baskets I'll put a little dollop of mashed potatoes topped with fresh chives.
There will also be a salad made from Romaine and loose red leaf lettuce topped with bell peppers, celery, dried cranberries, celery, carrots, green onions and cilantro.
Main course: Lemon Pepper chicken cut into strips and cooked in a crock pot with a little bit of chicken broth with a side of risotto.
As a garnish (and this is the super cool part!), I will make Potato Roses (http://finedinings.com/potato_rose_garnis

d_in_carrot_ri.htm). I found both of those recipes online and thought they were so cool so I will try to make them tomorrow!
For dessert, I will use my left over s'mores supply from camping last week and make oven baked s'mores :)
Other than the salad, veggie garnish and chicken, it is not the most healthy, but it offers variety and it'll be so much fun to make! And other than the salad, most stuff will be only offered in small portions so it won't be too bad :)
Anyway's, I was just so excited about it, I had to share!
