Hello and welcome! You'll find lots of ideas on SP. How about a stuffed tomato filled with chicken or tuna salad? Maybe some crackers and peanut butter, pitas stuffed with hummus and veggie strips, lettuce wraps spread with neufschatel [low fat cream cheese)cheese wrapped around radishes or green onions, or substitute flat bread or tortillas and add some hard boiled eggs - maybe deviled? for spice. Maybe some lean roast beef and mustard spread around water chestnuts with a roll. Try some cold beet borscht or gazpacho for warm summer days. Any kind of leftovers works; do you have access to a microwave? Even sandwiches taste better when I change up the bread I use - dark rye or pumpernickel, mini bagels, english muffins, soft pretzels, Italian bread sticks. Add a spread - fat free 1000 Island dressing, honey mustard, salsa, hummus with garlic & red peppers; then add something for crunch - pickle's, olives, cucumber slices, radishes, onions (red or green), spinach, shredded cabbage, sprouts. Use your imagination! Try just walking thru the grocery store and vow to try one new product or item each week & your lunches won't be boring anymore.
