As you can see, the calorie and fat count is fairly high but it really isn't a good representation since I did let the stew sit overnight in the refrig and skimmed off the fat. I also added some extra water as needed after skimming off the fat.

Oh please let us know how the oxtail turned out!!! I grew up on it too. Im use to eating it over peas and rice with plantains but I wouldn't mind eating it all by itself. mmmm

Oxtail has a very flavorful stew type meat flavor to it. It makes a good stew base or beef broth base.

Oxtail huh? Don't think I tried that. Is it really mostly for flavoring? or is there much meat on that?

Yesterday and today, I tried black eyed peas. Amazing. Hadn't eaten them before. Put them on my salad after I sauteed them in olive oil a mushrooms. Not too bad.

I have been working on a recipe but it technically isn't beachy due to the meat used. I grew up with oxtail stew and I have been wanting to make it but changing up the dish a bit. So I braised up the oxtails (without the flour coating) and cooked them all day in the crockpot. Now they are sitting in the refrigerator so I can pull all the fat off. All the ingredients are beachy but it is hard to get a true calorie count off it. I did not put potatoes in it but am thinking of adding lentils or barley (or both).

I figure I will be working on more beachy recipes here come next week when I begin to cook for the kids and the neighbors. I already warned them they were getting indoctrinated into SB this summer come hell or high water!

That sounds delicious. Have to wait a while to try some of those recipes I am hearing about. Peanut butter and chocolate are such a great combo anyway. Thanks for that.

1 serving dry oatmeal
2 tbsp sugar free chocolate powder
2 tbsp raisins
2 tbsp peanut butter
add a touch of skim milk or warm water to make creamy
mix until smooth

You can refrigerate or freeze for a yummy snack or even a meal (if snack I only use 1 tbsp p butter)

Today it will be another new one, zucchini dipped in egg beaters, then shaken in a bag with parmesan cheese.

Usually I steam the zucchini. This is something new for me. A nice side dish.

I posted my recipe for 'Berta's Chocolate Oat Bran Muffins'. These are muffins with soy protein powder, no sugar, no egg yolks, oat bran, and chocolate. They are a little dry, but have now oil added. You could use whole eggs instead of just egg whites for a little more moisture. I concocted the recipe for my brother and sister in law. They are both diabetics and she has Meniere's disease so can't eat much salt. It is a satisfying snack they can both eat.

I worked up a recipe for apple bran muffins, but lost it and I'm working on it again.

That sounds yummy! I use Prego when I bake mine so it's more like the kind you get at the restaurant.

I picked up a fresh salmon filet at the grocery today and cooked it up w/olive oil, dill weed and a touch of sea salt.

Yummmmmy!

I liked this one for lunch yesterday. Eggplant with ricotta cheese, egg substitue, parmesan cheese baked in the oven, layered with salsa. e

What recipes have you tried lately that are SB friendly?
