I track fiber also and it is sometimes hard to get the fiber in without overdoing the calories. I have joined a produce co-op and that has forced me to experiment with fruits and vegetables that I might otherwise not have purchased. I hate to have things go to waste, so I find that by eating up all those veggies before next week, it keeps the calorie count low, fills me up, adds variety, and usually allows me to hit the fiber goal.

Hi All!

I'm a mom of 3, wife of 1 and have a very active part time job in the food industry. I have been a vegetarian since November 2014, though I do plan to be more a of a flexitarian now since there are days I just need some meat to kick up the protein quotient!

I did not do well with my eating when I became vegetarian and finally decided to take it seriously and stop eating the junk!

I've been back on track with Sparkpeople for about 3 weeks now and have had good success. I am interested in hearing what ya'll eat for meals that is filling and still low calorie. I also seem to be low on daily fiber despite eating a ton of fruits and veggies (who knew spinach only had 1 g of fiber???)
