Welcome! There are a lot of Spark recipes you might want to check out as you have time. I know you'll definitely have to focus on things that don't take hours and hours to prepare, though! I've heard of people cooking a couple of meals on the weekends and freezing them for later, which might work for you. Crockpots are also a good option - just start it in the morning and your meal is done when you get home!

Hi all! I'm new to this way of eating, although I've never much cared for meat and always pick the meat out and off of meals anyway! LOL

However, cooking for a family of 4 (3 children) and being a single parent who works 40+ hours is proving to be a challenge so I thought I'd stop by.

PS. I love beans, vegies and fruits so bring on the recipes and ideas! :)
