Lazy Corn Soup

1 can golden hominy (drained and patted dry)
1 cup red beans (canned)
1/2 lb lean stew meat

Add stew meat, and beans to crockpot along with about 1 to 1 1/2 cups water. Add spices if you wish (salt, pepper, onion or powder, garlic powder, dash of cayenne). Heat a skillet just shy of smoking hot. Spray with cooking spray. Add hominy to pan. Fry until golden brown. Add to crockpot. Set on high for at least 4 hours.

Serve with fry bread. (I make mine 50% whole wheat flour, 50% all purpose)

"Traditioinal" corn soup uses dried then lyed corn. So I've played with this recipe trying to mimic my Grammy's because I can't find the main ingredient she used. She'd get these little green boxes of dried corn with an Indian head on them and it was awesomeness in a box. Now, living in redneck country and being too lazy to dry my own I've figured out a cheat version. It'll fill the void when you need a fix.

Okay - so no one has put a chicken soup recipe up yet. So here goes. I haven't had this in a while but I remember it fondly. I love the spinach and the chicken together - it is one of my favorite chicken noodle soups.

Spinach Chicken Noodle Soup

4 (14 1/2 ounce) cans of reduced sodium/fat free chicken broth
1 cup chopped onion (I don't like a lot of onion so I just put in a couple of dashes of onion flakes or onion powder)
1 cup sliced carrot
2 (10 3/4 ounce) cans reduced fat, reduced sodium cream of chicken soup
1 (10 ounce) package frozen chopped spinach - thawed
4 cups chopped cooked chicken (skinned before cooking and cooked without salt)
2 cups medium egg noodles, uncooked
1/2 tsp. pepper

Combine first 3 ingredients in a Dutch Oven. Bring to a boil; cover, reduce heat, and simmer for 15 minutes. Add canned soup and remaining ingredients. Bring to a boil; reduce heat, and simmer uncovered, 15 minutes.

Remove from heat, and serve immediately.

I frequently make little changes to recipes to suit my tastes - the recipe called for 1/2 tsp salt which I omitted so the sodium information might be lower. I just don't see the point in buying all the reduced sodium food; just to add sodium later on. I would add a good herb blend, nothing really strong. Watkins used to have a wonderful one but they quit making it. So Mrs. Dash or McCormicks. Just put in a couple - two or three dashes. Also you could buy grilled frozen chicken already made up or if you have time just boil your own chicken and use some of the broth from that in your soup. Make it your own, experiment and have fun with it.

A couple of the local restaurants are serving an asian salad with chicken, mandarin oranges, chow mein noodles, and an asian salad dressing. It is delicious.

Wishbone has a recipe for it here. I haven't tried it with almonds but it sounds good. I like celery in it.

Asian Chicken Sesame Salad

Serves: 4

Preparation Time: 20 Minute(s)

Ingredients

6 cups torn romaine lettuce leaves
1 lb. boneless, skinless chicken breast halves, grilled and thinly sliced
1/4 cup sliced green onions
1 can (11 oz.) mandarin oranges, drained
1/4 cup sliced almonds, toasted
1/2 cup chow mein noodles
1/2 cup Wish-Bone Light® Asian Sesame Ginger Vinaigrette Dressing

1. Arrange lettuce on serving platter, then top with chicken, green onions and oranges. Sprinkle with almonds and chow mein noodles, then drizzle with Wish-Bone Light® Asian Sesame Ginger Vinaigrette Dressing.

I like to make a Chicken Salad, with cut up Apple, nuts, lite mayo and you can always add other ingriedients such as pine apple mandarine oranges , dried cranberries or whatever you like. I like some spices too. Curry powder is good. You can serve it with whole wheat bread or by itself. I ussually just cook up skinless chicken . or rottesiere chicken breast. BE CREATIVE!Enjoy emoticon emoticon emoticon
