Yes, I have had the (Ukranian??? was what I was told) Beet style Borscht - and it is yummy too. But what I was making a variation of was the Cabbage style German Mennonite Borscht made here in South Central Kansas. My ex husband was German Mennonite - and his family history shows that they went from Germany to somewhere in Russia to do farming. German Mennonites are pacifists (sp? didn't believe in military duty etc.), and there was a period of time when Russia needed farmers, so the Mennonites (of this particular groups of families now in Kansas) were in Russia I guess for some 50-100 years. Then Russian got to where they wanted fighters and not farmers, with all the revolutions and such, and so in the 1800's some time frame (I forgot and I'm not married to the guy and his family any more), they all bailed and came to USA to farm, not fight. There are quite a bunch of them here in Kansas and maybe other parts of the USA.

So, from his mom, who learned it from her in-laws (His mom was more of an English or Irish type, and the in-laws were the German Mennonite family) I learned how to make their borscht. They were quite proud of the fact that they didn't use beets, but used cabbage instead. I don't know why it was such an item of distinction (or dissension??) - maybe because it "proved" that they didn't take on the Russian customs? I've no clue!!! But, they still add the cream at the end, to make it look pink (with the Cabbage borscht, they added a lot of tomato paste and/or canned tomato chunks... so that leads to a nice creamy pink color when the cream is added.), rather than purple the way it does when beets are used.

Sooo I had more borscht for dinner. Yum! It's so filling. Why do I not make this more often? And I think I will, now that I've figured out that the Instant Pot does a whizbang job of making Borscht in a reasonable amount of time.

So funny to see this great question and read the comments!! Last night I made a "borscht" (soup), only I used sweet potato instead of regular potatos (mostly because I didn't have any carrots. I kinda "killed two birds with one stone", so to speak.).

This morning, I was still thinking of how yummy the soup was, and reheated it for breakfast!! I added a tablespoon of chia seeds and a tablespoon of chunky peanut butter (Smuckers Natural) for additional protein and crunchy texture. Yum yum!

My 18 month old granddaughter and I usually share a bowl of oatmeal with blueberries. She won't eat it workout those berries.

Most people don't initially like something they are not familiar with - as I was when I first encountered blueberries. Now I love them... but ... frequently hold back because of the mental memory of "it's too expensive" (the primary reason I grew up without eating blueberries as a kid.). So... it may just be a matter of trying them periodically and switching off with fruits you know you do like.

Some research indicates that if we eat a bigger breakfast that we are less hungry throughout the day. I have always saved my calories for dinner because I like the food better but it gives me pause and I might learn to eat dinner for breakfast instead (at least leftovers) to get the bigger punch.

I do know that when I get enough calories (1/3 to 1/2 of total daily calories) for breakfast that I'm less hungry during the day and that is a good deal. Munchies are less likely when I'm still satisfied.

The less processed the foods are, the healthier they are, generally. I try to have some fruits or veggies that are fresh when I can. I also enjoy some veggies with my eggs. It is surprising how fun it can be.

Peanut butter is high in fat but is also full of other nutrients. You can buy the peanut butter powder that is 1/3 the calories and still has a small amount of fat. It's pretty tasty too, especially when mixed with a juice instead of water to reconstitute it.

Try some things you enjoy and find ways to reduce calories without sacrificing flavor. Start with one or two small changes and soon you will find you have a way of eating you can live with and not struggle with foods you hate to eat.
