I just read the book and I AM SOLD! This plan makes the most sense out of all the diet books and eating plans I've read about and tried. I'm on the 3rd day of the 6-week challenge and I'm very excited to have found this support team. I'm looking forward to the myriad health benefits that eating this way provides me.

I follow a lot of Dr. Fuhrman's recipes in his ETL book, as well as recipes in Forks Over Knives and a couple other books. Additionally, I eat a lot of raw foods and am having tons of fun learning new raw recipes (luckily my hubby has a good sense of humor, the other day he asked me what flavor of cardboard bread I am making today! LOL)

One thing I will say though, and I am only speaking for myself, the huge change was a bit overwhelming at first. Learning a whole new way to cook (or uncook in the case of raw) and buying new ingredients and the dishes and the chopping....wow, BUT, starting small and figuring out what works helps a lot. Turns out I spend a whole lot less time cooking than I ever used to...for example, I take an afternoon to make soups. The individual recipe makes a lot and I pick two or three soups Ilike. I went to GFS and bought inexpensive pint containers to freeze everything, and one afternoon's cooking gave me enough soup to last 3 weeks. I ended up completely reorganizing my kitchen (and I'm not quite done yet) and I'm sure there will be more changes, but it's evolving, getting easier, and I'm enjoying it.

For me, it all kind of started with one book, Eat To Live, so it worked for me to start small and then expand.

I eat about 3 fruits and 1T ground flax seed for breakfast. Usually blended up in the blender.

For lunch I get out a huge plastic bowl and empty most of a bag of lettuce into it. Then I add some tomatoes, cucumbers, avocado, zucchini, snap peas, etc. Whatever I have in the fridge that I can handle eating raw. Chop it up and put it on top. Then I add about half a cup of whatever bean I have. (I usually cook a big pot once a week and then freeze 1C portions in ziplox). Then I either use a nut/vinegar dressing that I made (see Dr Fuhrman's website for a few recipes) or some marinated tomatoes or onions/mushrooms (cooked) as my extra flavoring. If there still isn't nuts, I will add a half an ounce or so. This salad is so enormous it usually takes me about half an hour to eat it. I get out my book or watch TV.

For dinner I have a small salad (like the kind I used to eat) and something vegetable based that I cooked. A stirfry, some soup/stew, etc. Last night was a crockpot stuffed squash. I try to make sure there is another half cup of beans in this meal. Sometimes some more nuts, sometimes not.

I checked out cookbooks from the library and then buy it if I like it.

Its all in how many fruits and veggies you eat. And making it simple like just eat some fruit for breakfast.

Wow, I am amazed your doctor put you on it. My doctors have been really ignorant of vegan diets, and thus against them, thinking they didn't supply everything you needed. It is so nice to hear there is an informed doctor.

After countless years of my doctor being against it, and my assigned dietician also against it, well my dietician went vegan a year ago and then gave me 'permission' to do it too (like she had any choice any more, cause I was just doing it).

I still am learning so I can't give you advice, but just to give you encouragement to keep on. I am having wonderful health benefits from it.

Hi Vickie, I'm Vikki too !

Look at eating a vegan diet as an adventure. Try new things, new veggies, new fruits, new recipes, new combinations. I never realized how boring I ate until I became vegetarian and eventually vegan.

The world is full of fabulous foods to eat! HEALTHY, GOOD FOR YOU FOODS !!!
