Hi, just joined this challenge...thought it might help me get back to regular eating...this covid-19 situation has made eating anything not made by myself at my own table too difficult. I struggle at work and cannot eat from restaurants or other people's cooking. I realise that this is somewhat "disordered eating" and so I want to re-inspire a positive attitude about food in general. Tue, 9 Jun 2020 15:24:08 EST Hi! I'm Lori Hey everybody,

I couldn't find the "join team" button, so hopefully just the intro will work. :-)

I've been on Sparkpeople sporadically for years, and when I can obsess and spend hours upon hours here, I do well, but when I try to limit access to a half hour or so a day, I tend to go rogue. My biggest challenge with meal planning is perfectionism in regards to the nutritional information. I can list all the nutritional info in most of what I'm putting together, but the... Thu, 18 Apr 2019 18:01:36 EST just checking in - from Kelly :) Good afternoon Spark Friends!

I wanted to take a minute to reach out to each of the clubs I’m a moderator for. I joined SparkPeople a few months back and was actively taking the challenges and making friends and accomplishing my weight loss goals. Then a few things started to change in my life. I had to deal with a family crisis, some health complications of my own, and an 8-yr old child who is suffering from yet-to-be-diagnosed health issues. I don't have healthy coping skills, so... Sun, 8 Jan 2017 14:32:02 EST Week one I wrote out a grocery list full of healthy foods and stuck to it. I have written most of my meals for the week on the calendar. Great start! Sat, 28 May 2016 21:17:25 EST Cooking for the wee ones I have a daughter who is 3 years old. I've deliberately avoided most of the "kids menu" foods - chicken nuggets, hot dogs, etc. When I do, I make "nuggets" from scratch with chicken breast pieces, fresh butcher-shop sausages, homemade mac and cheese, and so on. She's as good as a toddler gets for trying new foods, and willingly eats a lot of veggies, but I feel like I'm in a rut as far as recipes go.

For those of you with young kids, tell me your kids' fave foods/meals! I also only ate out once and tried to make good food choices. Planning my meals ahead really helps, especially in the morning when I need to get ready for work and don't know what to make for breakfast or take for lunch. Sometimes I even pack some of my lunch the night before. Looking forward to week 2 of challenge. Sun, 1 Jun 2014 11:18:07 EST Prepping lettuce for salads all week I want to wash and tear my lettuce and keep it in a big bag or bowl for the week, so all I have to do to get ready for lunches is take out what I need. Sun, 13 Apr 2014 02:42:39 EST veggie pizza with flourless cauliflower crust This recipe was posted on Sparkpeople so I thought I would try this as my new recipe challenge. The pizza was not too bad but needed some more spices too make it more tasty. I did not use the pizza sauce just used tomato sauce and didn't have garlic in the pizza that might have made it better. I was disappointed in the video that was with the recipe her portions for the cauliflower were more in the video than what the recipe called for. But all in all I would recommend this recipe. Sun, 16 Feb 2014 11:23:59 EST Good Substitute For Broccoli? Okay, here's the thing..........I REALLY hate broccoli. Seriously, I just can't gag the stuff down. 24 I see a lot of healthy recipes that call for it. Is there anything else that can be easily substituted when a recipe calls for it? Sun, 16 Feb 2014 01:29:15 EST Starting over Hi, my name is Carol. I'm just returning to Sparks after 7 years to find my way back to a fit life. I had reached my goals and maintained until a year ago and managed, through the stresses of life, put the weight back on. I lost my motivation and now have vowed to get fit and stay fit. I'm having to retrain myself to eating properly and to get moving. I look forward to being apart of Sparks again. 521 Fri, 7 Feb 2014 21:20:55 EST Goals I joined this challenge to eat at home more often and skip fast food. I am going to school full time and working full time so I am looking for tips to make eating at home easier and faster. My goal this week is to eat at home 5 times. I am also eating at least 2 fruit or vegetables each day. Tue, 4 Feb 2014 07:26:23 EST How Do We Track Our Fiber HI I have tried to find a way to track my fiber. I can put that down as a goal , still is there any way the tracker will track it accurately so that we can get feed back on our reports about it.?? Tue, 21 Jan 2014 23:39:20 EST I'm working towards... actually fixing the meals I have on my monthly white board. I'm really good at thinking up interesting meals that I think my son and I will enjoy but when it comes time to make them I fall flat. So I'm starting out for one week. For one week, 7 little days, I'm going to use only things I have on hand to make nutritious, cheap meals that will also help with lunches and snacks. If I can make it one week than it will become two weeks and so on. Tue, 14 Jan 2014 17:27:53 EST New to the challenge & Spark People Just starting this challenge. I did my menu plan over the weekend and went grocery shopping on Monday. So this challenge fits in for me! :) I love to cook and try new recipes. Hubby enjoys cooking too, thank goodness!! Tue, 7 Jan 2014 23:40:43 EST Team spins How do I get this team to show up on my team spins menu? All of my other teams are there except this one. Tue, 7 Jan 2014 11:47:15 EST Introduction Hello,
I am new to sparkpeople. I joined this challenge because I know how important food prepping is for those with busy schedules and families. When I stopped food prepping a few months ago guess what happened, the weight came back! Now I am recommitting to food prepping on the weekend and eating clean. Yesterday I smoked two chickens, made vegetable soup in the crock pot and homemade protein bars. Sun, 5 Jan 2014 08:13:27 EST batch cooking sort of I haven't done batch cooking or once a month cooking exactly how they say do it. I have fixed an extra pot pie or lasagna and frozen it. Most of the recipes I fix really don't seem a fit for freezing. The closest I get is when I fix marina sauce in the slow cooker. I would love to do this more as it seems like on some meals it would allow for more time to prep veggies or other go alongs. Mon, 23 Dec 2013 13:28:15 EST My Goal I want to learn how to include my healthy eating into our menu without adding on to my expenses. I have two picky eaters ( my husband and my 16 yr old) so we have set recipes. I have slipped hidden veggies into some meals but they always seem to pick them out. Making two dishes of the same meal just doesn't work- too much time and money waste. Feeding six people with such varied taste is a huge challenge.
Mon, 23 Dec 2013 13:13:59 EST Potluck ideas I have a potluck luncheon next week. I'm making stuffed green pepper soup but need one more idea. I think for my second dish I'd like to go meatless but it's not necessary. All suggestions are welcome whether they have meat or not.

Thank you Thu, 12 Dec 2013 17:33:24 EST Team Goal Question I signed up for the goal to cook at least 2 meals a week at home. When I went into my Other Goals section to record things, when I selected this goal it asked me how much - how much what? It has a drop down menu to select from that is 6, 72, 60, 150, 5, 8, 87, and 105. I can't think what these choices could be - you could never do 150 meals in a week for eg. and we are to record by the day not the week. Anyone know how to do this one? Sun, 8 Dec 2013 18:23:41 EST Challenge Completed I have followed all the steps of the challenge and have learned some things along the way. I will continue on my quest for healthier cooking and look forward to joining more SP "official challenges" in the future. Thanks for the inspiration and motivation! 223 Sun, 24 Nov 2013 11:33:41 EST New printable recipe cards to share... Hey everyone... I have a difficult time preparing healthy meals for my family. Once I leave work, which is at 5:30p, I pick the children up, head home, help them with their homework (homework is a lot more complex these days), and still try to cook a healthy dinner, get the kids in the shower, read them a book, etc. It can be pretty overwhelming. Thu, 14 Nov 2013 10:03:57 EST Is there anyone out there? Just joined this group and did not see any new posts other than the weigh in post.
My goal this week is to make my vegetables more interesting and still stay healthy.
It is so easy to just steam something and that is it, but it is boring after a while. Sun, 13 Oct 2013 02:58:15 EST My intro: Cooking for one isn't fun I decided to join this team to encourage myself to cook and plan meals. This was easy when I had a roommate because the cooking options seemed limitless. Cooking for one is not as fun for me because I don't like eating leftovers more than one day; and I get tired of eating the meals that seem the best and easiest to cook for one person. Working out is the easy part for me; and I know planning and cooking meals is the difficult part for me. I look forward to the challenges as a way to kick-... This is my first challenge and I am actually excited. I just spend half my lunch hour surfing recipe options on Sparkpeople. I think this will be a great challenge. 213 Fri, 4 Jan 2013 15:37:39 EST My Tools Tools I use a lot in the kitchen are:
Hand held blender: great for soups and sauces. I blend up vegetable soups so they are nice thick and comforting. Homemade sauces are a breeze with this as you can add all those vegetables and blitz them up and no one has a clue they are eating hidden veggies.

Crockpot: I have just started using one and the results are brilliant. I had a hospital appointment and that meant I was out all day as I had to travel to get there. So I did a meal i... Fri, 4 Jan 2013 03:21:23 EST Making over meals. My family likes traditional foods, so I try to make them a little healthier by making small changes. Using less oil, eliminating salt but sometimes I go overboard on garlic & hot spices. Most of the time my family likes the changes or they don't even notice the difference. Thu, 3 Jan 2013 21:55:32 EST Food shopping I make out a list of what I need and stick to it as much as possible. I may have to make a few alterations but that is fine provided I stick to the plan.
Whole wheat pasta and rice
Whole grain cereals
Lots of fruit and vegetables
Canned beans
Meats are things like Chicken, fish or turkey with the occaisional Lamb or beef both are expensive so I don't get them often.

Bread is wholegrain and there are so many varieties to chose from you cannot get fed up with... I joined the January challenge last week and now am joining this one. I am looking for ways to create healthy meals for my family and not just quick and easy meals (like I have been doing). Mon, 31 Dec 2012 20:01:20 EST Goals My goals for the next 4 weeks is to cook meals for my family that are healthy. I spent today cleaning out my pantry of junk and organizing it. I cook, but it isn't always healthy. I have focused on just getting something fixed to eat but not necessarily healthy. Mon, 31 Dec 2012 19:58:06 EST Hey there! Hi! Wed, 26 Dec 2012 09:26:51 EST Reflection of week 3 I love this challenge most of all because I love to cook. There were a few setbacks cooking this week caused by my not tracking Wednesday and Thursday and only partially of Friday, but a 4 pound gain has motivated me to be more diligent in tracking before eating. Sat, 22 Dec 2012 23:28:45 EST Step 4 Find a healthier recipe Campbell's Cream of Mushroom soup has lots of sodium, heavy cream, and regular milk, but I needed cream of mushroom soup for my recipe. Tue, 18 Dec 2012 05:57:49 EST Task 4 Finding a Healthy Recipe For this task I will find a healthy recipe, but I love to cook and finding older unhealthy recipes and turning them into healthy tasteful delights is not only a challenge, its fun. Sun, 16 Dec 2012 23:54:37 EST Task 3 Flavor without Fats This was the most helpful of all the articles. I love to cook and I use herbs and spices all the time, but this article was full of important (at least to me) and useful information that I did NOT know. I printed it out. Sun, 16 Dec 2012 22:32:21 EST Task 2 Become a Better Baker I love to bake and sometimes use unsweetened applesauce in my bake goods, but I prefer to make the serving size smaller or reduce the amounts of chocolate and follow the europeans style and add healthier fruits and nuts. I also use artificial sweeteners designed for baking when possible. Sun, 16 Dec 2012 22:29:31 EST Task 1 Make Smart Substitutions I have tried some of the suggestions in the past and for the most part did not like the results, that is not to say that someone else will not like it. I usually cut the amount of meat in half and increase the amount of vegetables, I use artificial sweeteners when possible, and this week I am making my own healthier version of cream of mushroom soup, which will be fun because I have never made a roux before ( I have a friend who is a chef to teach me 30 ) Sun, 16 Dec 2012 22:25:52 EST "Share your goals in our Week 1 forum." I am embarrassed to admit how many times I have planned my weekly menu & purchased the necessary ingredients, but end up wasting good food (and the money spent to buy it) because I make all kinds of excuses to NOT cook. I hope that "going public" here will help me break this cycle. I will keep things very simple to start with, to help ensure success. And I hope ... Sun, 2 Dec 2012 20:07:53 EST Hello Everyone!
