About 4 years ago was diagnosed as Gluten Sensitive and about a year later it had become Celiac. No-one else in my family has it. Once I was diagnosed and got off all gluten stuff, my migraines went away and was able to get off all my meds for it.
On Hubby side of family, my nieces both have Celiac. They were little when found out and now they are college age. They have been a big help for me.

The one thing I miss the most ... They were having cornbread with it so I decided to make my own. I started to look up actual GF recipes, but then I decided to try the recipe I've had for years and just substitute the flour with Bob's Red Mill 1 to 1 Baking Flour. It worked perfectly! Wed, 24 Oct 2018 12:46:31 EST Getting enough whole grains while GF So I am realizing that most of my life my 'whole grains' were whole wheat products. I am trying to figure out how to get enough whole grains in and stay GF. I have explored a few different types of rice. (I am loving leftover black rice for breakfast). Any other ideas? I know GF oatmeal is another option - other than that I am stumped Wed, 11 Apr 2018 03:36:20 EST Anyone deal with cross-re ctivity? I have been gluten free (mostly since this past summer). I finally realized gluten is what was causing all of my abdominal problems. Every once in awhile I still have problems. At first it was because I was finding where gluten was hidden. Then I was good for a little while. A couple months ago I would occasionally have similar symptoms. I would check ingredients of everything I ate, but not find anything. I started realizing that it was when I would eat chocolate - but not in GF baked... Tue, 10 Apr 2018 14:35:33 EST Hello from Texas Hello!!
This whole Gluten free thing is new to me. Tue, 2 Jan 2018 08:41:01 EST New to this board Just dropped in to say hello. I have been gluten free (as much as possible) for about 22 years now. Wasn't easy at first, there were very few GF products. I had to learn to cook differently. Luckily I found Bette Hagman's Gluten-Free Gourmet cookbook. She saved my life. If you don't have one of her cookbooks you need to get one. Now it is fairly easy to go GF. I would love to know your experience with being GF. Sat, 18 Jun 2016 08:51:12 EST Gluten withdrawal? I gave up gluten 3 days ago and I've been exhausted ever since. I've had to take a nap every day the last few days and I went shopping with my mom today and could barely keep my eyes open. I literally felt like I was going to pass out. So two questions, 1. Is this a normal side effect and 2. Should I wait to start an exercise program until after the fatigue wears off. I haven't started yet but I'm thinking I may not be able to put my best work in if I'm so tired. Thanks in advance :). Sun, 14 Sep 2014 08:45:53 EST New to Gluten Free and SP I've been with SP not quite 2 months now and was told by the Dr about a month ago to not eat gluten. I had gotten use to not feeling well before and after my gall bladder surgery 4 years ago, always having stomach issues that would have me searching for the nearest bathroom no matter where I went. Even when I'd eat well, my body would betray me. I have no doubt that I was beginning to harbor anxiety towards going out in fear that my stomach issues would flair up again sending me running. <BR... Sometimes I feel like I am at an AA meeting when I have to admit that to people. It changes where my family and friends can eat out if we are going together. I bring food with me everywhere after being given cross contaminated food. Still mourning the food I can no longer eat but feel much better. Headaches , bloating, and joint pain are gone. Thu, 7 Aug 2014 12:55:23 EST 100% is my goal! Greetings! While I am not new to gluten free eating I am new to the board. I look forward to receiving great recipe ideas and support to continue GF from all of you. It's been almost 4 years since I've endeavored to be 100% GF. While I am successful 80-90% of the time, there are those times when nothing beats a flour tortilla for that burrito. As the years have gone by, though, the effects aren't worth the splurge. Sun, 3 Aug 2014 16:45:10 EST new to this group I found out by trial and error that I have issues with gluten. I don't know how to explain it other than when I go back to eating gluten it weakens my immune system. Once back on it for a couple of months I start with the infections, eye, ear, uti, etc. It is so not worth eating those foods. I know some people don't believe in it, but I think leaky gut is a real thing! Anyway, wish I could come up with an easy, tasty bread recipe so I could eat sammies again! Tue, 16 Apr 2013 07:03:32 EST Quinoa Review I've heard time and time again how great quinoa is for you, not to mention it's lack of gluten and high quality protein attributes. So I finally tried some this evening, and I got to say, it's fantastic. The consistency isn't really comparable to much, other than maybe a very light rice, but it's prepared about the same (as rice), has the same amount of calories per serving as brown rice (160), but 3 times the amount of protein. I've read recently (but cannot remember where! 198 ) that some people with gluten intolerance can tolerate ancient wheat strains like spelt and kamut, because the ancient grains have different forms of gluten than modern wheat, which has been cross bred with plants like goatweed, which has a different protein than original wheat. I'm new to GF, just started on Monday of this week so this is Day 4 for me. I have hypothyroidism and Synthroid, Diet and Exercise were not enough to help me lose the weight. I've read about the connection between Hypo and Gluten and decided to try going GF after Sunday. I don't normally eat a ton of breads and pastas anyway (maybe a few times a week) but on Sunday my family went to visit my sister's family on the beach and I ended up eating bread at every meal. And even... Thu, 14 Jun 2012 08:17:18 EST GF Newbie I am new the gluten free thing and definitely have a lot to learn. In January I went wheat free and didn't eat the normal "gluten" type items: barley, rye, oats, etc. This month I went to see a ND for the first time as most people have said when they went wheat free, they lost a lot of weight. I lost nothing, so I figured there is something else going on. During the first visit she gave me an intolerance test and warned me that the gluten area wouldn't probably have a true reading since I had... Wed, 13 Jun 2012 15:24:34 EST Hoping this works:-) I am an aerobic instructor and have been for over 6 yrs. No matter how thin I have ever been, I still have what I call "the twinkie" a part of my lower abdominal that still protrudes. When discussing the issue with one of our personal trainers, she mentioned that I may be allergic to gluten and to try a gluten free diet for a while and see if it helps. I am truly hoping this will help and I can use any suggestions or advice on this because it is all new to me, especially as a wheat lover. I have a great reduced calorie pumpkin pie recipe, but this year, I need to figure out a gluten free crust for it. Any ideas or recipes? Sun, 18 Oct 2009 09:32:31 EST using agave, stevia and xylitol I write a cooking column for a small magazine, and have been asked to feature a different product or type of thing each month. I did quinoa last month, and I thought that maybe I could write about agave this month. Has anyone used it? Has anyone made a pie crust that is GF? Have any of you substituted any of these sweeteners for corn syrup? I bought some agave nectar at Costco but have not used it yet. I'm dreading my first Thanksgiving. I'll buy the regular pumpkin pie from a good bakery, bu... Wed, 7 Oct 2009 22:28:54 EST hello My name is Corina - I'm a homeschooling mother of 4... I usually have meat with dinner every night, but how do I incorporate more protein into my daily meals?

I used to have a soy-protein shake for breakfast every morning, obviously that has been cut out. Well, folks,I'm brand new to forums, and am overwhelmed. I have been going gluten free over the last six weeks. I saw a naturopathic doctor, who said I tested positive for wheat sensitivity. I mean, really positive. I can eat a bit of spelt, he says, but not too much. I'm cool with oats.
But I'm wondering if anyone in this group has the problem of hypothyroidism and must go gluten free. I'm wondering if there will be any positives in the thyroid area. My numbers on blood tests are a... Sun, 30 Aug 2009 00:16:03 EST Food Intolerance after gallbladder removal... I did a blog of this today and someone replied about looking into a gluten-free diet. So I am posting this same message here to see what others on this team think.

Blog message:
Over a year ago, I all of sudden had left side pain that sometime shifted to the middle then to the right. After several days of it not going away, I went to my primary who's first guess was gall bladder problem. I then had several tests and several specialist appointments, all of which determined m... Thu, 27 Aug 2009 15:36:55 EST using the food tracker with GF foods Hello, I am kind of new to Spark people (I signed up a long time ago just didn't know how to use it) and new to this team. I would like to hear some ideas/suggestions on how to use the meal/food tracker and be gluten free. Someone please help. (now let's hope I can find my way back to this message so I can read all of your wonderful ideas.) Mon, 10 Aug 2009 22:07:26 EST Hey everyone. Stepping my toes into the GF way. I am a 27 year old mom of two awesome little boys. Ever since I can remember I've been plagued with canker sores. Not just one or two....I'm talking about clusters of canker sores in my mouth, and they are present more often than not. No doctor can explain them, just tell me to use canker sore treatment cream from the pharmacy. I've also suffered from extreme fatigue for as long as I can remember. I could sleep 16 hours a night and still be exhausted. It really is affecting my quality o... Fri, 7 Aug 2009 23:28:21 EST Has anyone tried Miracle Noodles? I have an opportunity to buy these wholesale through an online coop, but want to find out if anyone has tried them. Here are the claims from their website
* made of naturally water soluble fiber with no fat, sugar, or starch.
* contain zero net carbohydrates and zero calories, no gluten -made of a healthy natural fiber called Glucomannan.
* wheat & gluten free and kosher.
* Easily absorbs the flavors of any soup, dish, or sauce.
* are instant a... Fri, 7 Aug 2009 11:37:48 EST Travel I just got back from a weeklong trip. Only got glutenated once and not badly, but staying gluten-free--and having to educate every wait person or counter clerk really wears me down. (It's not that I feel I HAVE to educate them, but when I ask if something has wheat in it, and they give me a look like I'm a newly discovered alien species, I kind of feel obliged). Any suggestions? Wed, 5 Aug 2009 18:57:03 EST I'll try anything.... This weekend I decided that one beer "couldn't hurt" but boy was I wrong! Since my Friday night beer, my stomach has been so distended that I decided to measure it today to see if it was all in my head. My waist is measuring 4 inches more than when I measure myself on Thursday! WHOOA!

I know that it will just take a few days to go away but it is painful and noticeable AND I'm going to the beach tomorrow for a week! I really don't want to look 4 months pregnant all week in a bathin... Sun, 2 Aug 2009 16:21:14 EST Strange pain in Achilles Tendon I am hoping some one may have an answer.

Periodically, and it seems to happen most often when I am sleeping, I get shooting pains in my Achilles tendon.

It actually feels like little electic currents are racing down my legs (though that causes no pain) that once they hit my Achilles tendon just Pop with electricity causing a twitching pain. It seems to happen more w/my left leg than my right.

I really think it has something to do w/my hypothyroidism, fibromy... Fri, 31 Jul 2009 12:00:03 EST Not enough carbs?! I have a gluten intolerance, if I plan ahead I can eat some foods with gluten, but in my kitchen I cook gluten free because it is an easier way of life for me. I live in a very small town with limited choices for GF foods, much less being able to afford them all the time when I find them, but I am finding since starting sparkpeople that I am not getting enough carbs. Does anyone else have this problem? Or perhaps a solution? Mon, 27 Jul 2009 00:49:11 EST Changing taste buds? I don't know if my taste buds are going through a natural change or if its my healing body allowing other cravings to come through. I have noticed that my food wants/cravings have changed lately. I went GF last fall.
There are foods that I didn't like before or were indifferent to I want or crave now.
I used to crave meat constantly before and now its - ehh

Has anyone else noticed a difference in their food cravings after going GF? Sun, 19 Jul 2009 17:15:21 EST Cases of celiac disease up dramatically: report NEW YORK (Reuters Health) - In the United States, celiac disease is four times more common now than it was in the 1950's, according to a study by researchers at the Mayo Clinic in Rochester, Minnesota.

The Mayo Clinic study also found that people who didn't know they had celiac disease were nearly four times more likely than people without celiac disease to have died during the 45 years of follow-up.

"Some studies have suggested that for every person who has been diagnos... Sat, 18 Jul 2009 10:52:56 EST Went off my Gluten-Free diet big time yesterday! Yesterday I turned 60 yrs. old! I not only went off my regular lifestyle change diet, I went off my Gluten-Free diet. Unfortunately, I was stupid and I'm paying for it this morning. Don't feel good at all! Unfortunately again, in my case, wisdom hasn't come to me yet!
Lester Fri, 17 Jul 2009 06:46:47 EST Feedback on a Choc Chip cookie recipe I heavily modified a recipe I found on (enough that I feel comfortable calling it my own), and I've love to get some feedback.

I am becoming wheat-free, but not gluten-free, although I think I covered the necessary substitutions in the blurb. So I had to find a way to make my all-time favorite dessert wheat-free...Chocolate Chip Cookies!

They only come out to about 100 cals each. Let me know what you think if you try it. I'd like to know if anyone has iss... Fri, 17 Jul 2009 03:43:02 EST Wheat Freebie Hello! I've been on SP for about a year, but I am just now starting to getting rid of wheat in my diet. I don't have celiac disease, but my acupuncturist recommended limiting or completely getting rid of wheat in my diet due to congestion in my system (I've suffered from chronic allergies and sinus infections for years). I don't need to be 100% gluten-free, but most wheat-free recipes and foods I've found are gluten-free already, except for rye bread.

I'm already *mostly* dairy fre... Fri, 17 Jul 2009 03:37:42 EST Favorite GF breakfasts I was wondering if anyone had favorite meal combos, so I'll start off by asking, what's your favorite breakfast?

Probably my favorite breakfast is to take 3 oz of Yoplait Light yogurt (any flavor) and stir in 1/2 cup of skim milk. Then I add whatever fruit's seasonal (blueberries and bananas right now) and a cup of rice chex. The yogurt sweetens without sugar and adds an extra bit of interest to the taste. Wed, 15 Jul 2009 19:29:31 EST Hello everyone! Hello! I have decided to try again on getting healthier and losing weight. I have never been a fan of diets, so last summer I tried a different website, but already have noticed a lot more resources and support from SparkPeople. I am hoping that this time works. It takes a lifestyle change and I am going to try to make it work.

I am a band director in a small town in Missouri, I am starting my fourth year and starting to see success bloom. Wed, 15 Jul 2009 14:53:42 EST New Member Hi everyone,

First, I must warn you that this is a very, very long post, but I feel that by giving more info, the better. Here it goes: I am a single mom to a wonderful 11 yo girl who has been GF for a little over a year, CFSF for 3 months. I am in deperate need of advice and have joined so many GFCF forums that I am hoping I can find an answer/suggestion here. The hubs and I were watching tv when an ad for some Aveeno product came on and they started talking about the wheat protein protecting the shaft (or something like that).

I had a total lightbulb moment!!

I recently switched shampoo and conditioner - both at home and at the gym... and recently I've been having lots of "pre-diagnosis" pain again. The pain has made no sense because I never eat gluten, and I've had very little opportunities for cross-contamination or acciden... Mon, 6 Jul 2009 23:32:56 EST Sparkpeople Menu Planner Do you think they will ever adjust this so we can use it? It is not worth the effort to use it if I have to change every meal to eliminate foods with Gluten. It is annoying Fri, 3 Jul 2009 21:24:22 EST Oops. Almost forgot. I thought I had introduced myself already, but I didn't. I don't have celiac, but the form of gluten intolerance that causes nerve damage (and doesn't have a name yet). I've been off gluten since last September, and although I'm not entirely healed yet, most of my neuropathy is gone (except when I get accidently glutenated). Since I live alone and banished all forms of gluten from my house, I don't really have a problem avoiding it, except when I have to eat out. I'm glad to help answer q... Tue, 30 Jun 2009 18:48:00 EST New to Team Hi everybody,
I'm new to the team, but I recognize some names already. I have had Celiac Disease for about 5 or 6 years. I have tried hard to stay gluten free, but occasionally I can't help but succumb to my temptations. Like Pizza. That is one food I really miss. Well, I need to confess that I do have it now and again. Like once every six months. Well anyway, I think this Spark People website is really great. I'm looking forward to meeting all of you.
