Roasted veggies (red, yellow, green peppers, onion, garlic, broccoli, etc.) with some shredded beef roast and salsa on top. It was great! Probably because it was mostly veggies, so I knew I was doing a good thing for my health!

I made a cold salad of eggplant, ginger, garlic, soy sauce, sesame oil, hot sauce, vinegar and peanuts. It is diet friendly, nutritious, and really really tasty.

Stirfry with 1 head of bok choi, 100gr tenderstem broccoli, and 100gr mushrooms. I use 1tbsp soy sauce, 1 tbsp mirin, ginger and garlic for the sauce.

I also baked 150gr of pink salmon to eat with the stirfry.

Last night I made Cream of Crab soup. Normally we get this at a local restaurant but I am sure it has oodles of calories because it is made with cream, etc. I developed my own recipe where I subbed fat-free half and half and I use only 2 tbsp. of butter to make the roux. Although not exactly low-calorie, I am sure that 338 calories for a generous bowlful beats the calories for the original version. I added some salt-free saltines to my bowl because I love crackers in my soup! It tastes amazingly similar to the original. My Cream of Crabby Soup can be found on Spark Recipes!
