I made chicken fajitas. Pretty healthy with flour tortillas, chicken, sautéed peppers and onions, black beans, plenty of lettuce and tomatoes. I didn’t have any avocadoes unfortunately.

Tired and didn't feel like cooking, so a couple of eggs poached hard in the microwave, added to chopped asparagus and onions and dill with Greek yoghurt for an easy egg salad on sesame rice crackers...

last night cleaned veggies out of the fridge and cooked with chicken and some leftover marinara I needed to use up. I added one portion of pasta (for 4 servings) for a few carbs :) tonight we're having chicken shawarma with cucumber and yogurt, hubby will have a wrap for sure.

I heated a package of a healthy mix I bought that had Freekea, "made from wheat", brown & white rice & seasonings in it in my oven, no longer have a microwave, roasted full chicken leg with spices on it & boiled snap peas,white onion,carrots & spinach,that I put in just before done because I am on a low Potassium diet because of a side effect of my kidney disease, kidney GFR is 65, means 55% working but Potassium is building up in my body daily, level is 5.0 & 5.1 causes stroke ,heart attack & sudden death, very toxic. I must boil all vegetables first, then may stir fry or roast them for a few minutes & soak all vegetables in warm water for 4 hours then drain & rinse before cooking.Most people do not have this until they need a transplant, my problems have started early. The USDA has a very good public database site for all food products includes restaurants & junk foods.The Potassium list is 232 pages, some do not apply, I have printed out 56 pages,40 more to do tomorrow, then done with the list. I added calories to the list to show both on the same list & printed it by food group so I will make my grocery list at home & take it with me every time I shop. I can now have a maximum of 2 dairy foods daily. Soy products also have a lot of Potassium. I drink other milks, not soy milk anyway. My diet now will be extremely difficult to plan. I grocery shop this Friday with my new large list to take with me.

Health coach 3 month program starts March 12,every Monday by phone. I have chronic kidney disease and low blood pressure & blood clots in both lungs for 3 years..I am 55 years old. I do walking and ride the bike at the gym 65 minutes, 3 times a week .
