Open faced broiled veggie sandwiches. I took two pieces of bread, spread them with dijon mustard, and topped with shredded carrots and beets, purple cauliflower and slices of red bell pepper. I sprinkled muenster cheese on top, broiled it to melt the cheese, and then spread some hummus on top of that. Yummy and virtuous.
Not all those who wander are lost.

Ahh!!! I forgot to pack lunch/dinner for today and I work 2-8pm, so I was rushing to figure out what I could stop and get to eat.... I storpped at 7-11 and picked up a small thing of pasta salad, a small bag of baked lays potato chips & a thing of chobani (sp) Greek yogurt with strawberry fruit on the bottom. I tried to "shop" healthy, so I will still be able to eat something good for dinner, although I really HATE having to eat after 8pm... but I'll make it work.
