My husband wanted a Guatemalan breakfast. So, I woke up early and made a low-fat version. I hmade coffee. I "fried" sliced plantains in a little bit of Pam cooking spray. Blended up a can of black beans, garlic, onion, salt. Then refried the beans with a couple sprays of Pam. I sauteed green onions and diced tomato and then added egg whites to it. I garnished with low-fat sour cream. It was yummy!

Keep me honest, PEOPLE!

I just discovered clementines (mandarin's)...silly me! They are sooooo good and really do taste as sweet as candy. Two of them compliment my shredded wheat and skim milk for breakfast perfectly at only 35kcal per orange! Yum!
