2 whole eggs (or 1 egg plus one egg white - nutrition info calculated for 2 whole eggs), beaten well 1 medium sized banana, mashed well
Optional: dash or two of cinnamon, 1/4 tsp. vanilla extract Directions
Mash the banana well in a medium bowl. Beat the eggs and mix into the banana. Add vanilla and cinnamon, as needed. Ladle onto well-sprayed non-stick pre-warmed griddle. Cook over medium to medium-high heat until well-browned on first side. Turn and cook other side. Serve with additional fruit or other pancake toppings, as desired.
