Every Sunday I make an egg casserole and then take portions to the office with me daily for breakfast. It's got eggs, sausage, turkey, or ham, and whatever veggies I have in the fridge that day. Asparagus, mushrooms, spinach, etc. Whatever I have on hand that sounds good.
10 eggs 1/4 cup unsweetened soy milk beaten together sausage/ham turkey cooked and drained well assorted veggies salt and pepper (sometimes garlic or other spices as the veggie matches) sprinkle top w/ 1/4 cup of whatever cheese I have on hand bake at 350 for 30 minutes uncovered in an 8X8 glass pan sprayed with Pam. makes 8 portions and is high protein, low carb.
I enter it into the foood grouping tracker and alot myself 1/8 of it on the days I eat it.
I usually have an apple with peanut butter or southwestern eggbeaters with veggies, but today I had an english muffin grilled in olive oil spray, and spread one of those laughing cow lite cheese wedges on top. Yum!

I would DIE without breakfast! I either have egg whites blended with oats to make pancakes, or oatmal, protein powder and blueberries - yum!
To be who you are is to be enough. To share who you are is to share enough. To do what you love is to do enough. There is no race to win and nothing to be proven, only dreams to be nurtured, a self to be expressed, and love to be shared. - Donna Newman
Breakfast is my most important meal of the day, since I don't really get a chance to eat anything until 3 PM or so after breakfast. So anyway, I usually have the same combination of food for breakfast, and that was no different today:
SamFrankie - I'm in the same boat as you...I'd rather squeeze that 30 minutes in the kitchen to 30 at the gym. There is only so much time in the day (also married, work full time, have two kids that have to be places at night, and church).
Little Sasha. . . obviously I'm feeling inferior. . . LOL!--b/c I'm also known as a super organized, multi-tasking master, but with working full time, being a mom, and loving my sleep. . . there's just NO way I could do it!!
Good for you! do you work full time? kids? (throw me a bone here!! LOL!)

I have a few different things I eat. Mostly, I either have Quaker Instant Oatmeal or a Natural Ovens bagel with Brummel and Brown spread on it. On the weekend, I will often cook up an egg beater omlette with onions and spinach and salsa.
