Simplest lentils recipe - 2 cups of lentils - 5 cups of water, add frozen bruce sprouts. Boil for ~15 minutes, add salt and pepper. When lentils are ready add lemon juice. Tastes amazing and is very healthy. emoticon

Good topic, lots of things to try. Here we make cold lentil salad using firm lentils, just enough good mayo, French mustard, parsley, cubed ham, a little vinegar, a little green onion. Very good, very filling, very French.

This is my favorite lentil recipe, my family likes it too:

For simple dinners for just myself,
I batch cook lentils and freeze them in single portions.
Take one portion of cooked grains (rice or bulgur or buckwheat),
add a portion of cooked plain cooked lentils on top.
Add garlic powder, olive oil, lemon juice and whatever spices you like,
tomatoes and olives on top - a delicious and filling meal, with lots of protein and fiber.
Works with beans, chickpeas or split peas just as well : )

I make a lentil salad
2 cups cooked lentils cooled
1 cup apple chopped(peel on-soaked in lemon juice to retain color)
1 cup celery chopped
1 cup onion chopped
1/2 cup raisins
1 cup mayonnaise
1 cup sour cream
Salt & pepper
1/2 tsp curry powder

I love it! It's very tweakable!

I usually pressure cook my lentils (after soaking, depends on the specific lentil). While they're cooking, I brown onions, garlic, a chili pepper, turmeric, and tomatoes and cook down until caramelized. Sometimes I add ginger, cumin, and/or coriander powder. Add to the lentils, cook for 5- 10 min to allow flavors to mix (add salt to taste). I usually throw in some fresh cilantro at the end. Simple! Serve with rice, naan, or roti (whole wheat flatbreads). I also have yogurt on the side to up the protein :)

Healthy choices and actions have positive impacts, even if the scale doesn't move!

I have an awesome recipe that I use for red lentils, packed with 29 grams of fibre and it's a winner. It's called North African Spiced Lentil soup, you can find the recipe on America's Test Kitchen, if you don't find it I can send you anyone interested a personal message or if not too much I could post to this thread but it's lengthy but oh so quick and easy. Let me know, it's a family and friend fave.

I had lunch at the Lourve Museum in Paris (what a setting) and they served ham and lentils. I think all they did was put a huge ham bone in a pot and then put in water and lentils and cook them. Or more likely, cooked the ham bone first and then added the lentils and water. The bone was removed before serving and the ham removed from the bone.

Delicious combination of flavors.

I make lentil tacos just season with taco seasoning in a pan in place of hamburger and put into taco shells and add toppings

Here's a soup I've made too. It's a Barley, Lentil and Mushroom soup. Family liked this as well:
1/4 cup olive oil
1 medium onion, chopped
1 stalk celery, chopped
2 carrots, chopped
3/4 cup pearl barley
3/4 cup dry brown lentils
1/3 cup dried porcini mushrooms, rinsed
2 quarts low-sodium beef broth
1/4 teaspoon dried thyme
1 teaspoon dried parsley
1/4 teaspoon freshly ground black pepper
1 bay leaf
4 cups sliced button mushrooms
1 tablespoon dry sherry (optional)

Heat the olive oil in a large pot over medium heat. Add the onion; cook and stir until onions are limp, but not brown, about 5 minutes. Mix in the celery and carrot; cook for another 5 minutes. Stir in the barley and lentils so they are coated with oil, continue to cook and stir until lightly toasted.

Pour in the beef broth and season with thyme, parsley, pepper and the bay leaf. Bring to a boil. Add the porcini mushrooms, cover and simmer for 25 minutes over low heat. Add the button mushroom, cover and continue cooking for another 30 minutes, stirring occasionally. Mix in sherry during the last 5 minutes. Taste and adjust seasoning if needed before serving.

At times I may add some beef meat cut up in small cubes. Overall I think I have the nutritional value close - Per Serving: 265 calories; 8.9 g fat; 33 g carbohydrates; 14 g protein;

There's a recipe in SparksPeople called Herb Lentils and Rice. I've made a few times and really like it. I made it without the cheese and that was just as good. The family likes as well. You might want to try it

1 cup lentils (red, green or brown)
1 cup brown rice (medium grain, not uncle Ben's)
1 onion, chopped
if desired, mix of other veggies
6 cups water

Put everything in a pot, bring to a boil, skim if necessary, put on lower, lower heat to simmer and cook about 45 minutes (check the rice -- if it needs an hour, take an hour)

Brown lentils will soften; green lentils will remain firm; red lentils will totally disappear.

Freezes well. Makes a lot.
