.... and I thought trying to stay under 200 was bad. I already make some things myself to keep sodium down, so I guess I'll start more of it with an eye to lowering carbs as well. Good luck!

Complex carbs don't work for me. My A1C only stays out of the pre-diabetic range when I keep all carbs less than about 35 per day.

HAWKTHREE - Are you type one or two? Complex carbs should be okay. I've been having a tough time keeping carbs down eating two meals daily for intermittent fasting (about three months now). I got stuck for my labs a couple days ago and go to the Doc next week, so I'll know how I'm doing. I've been sticking myself again and have had a couple higher readings, but mostly around 100 to 145 postprandial and 90 to 100 fasting. We'll see what the A1C has to say. Hope you find a balance. It can be tough to stay safe and stay happy as well.

I haven't figured out how to manage diabetes on plant based. Not many plant based proteins that are carb free.

How are you doing? Do you struggle with the vegan plan? I am considering going vegan, do the part time vegan because I have daughters who are and it is easier than when I was vegetarian last century. Well in the 80's.

Congratulations on the great start! Plant based is so much easier than the previous decade! So many choices in the stores and restaurants. I'm working on plant based first six weeks. Facing coffee challenge later, one focus at a time.

You're off to a great start! emoticon

I'm also trying to kick the coffee habit. I've been doing well the last two weeks limiting myself to just one cup, next week I'm going to half a cup. emoticon

I think a vegan diet is great! Slowly working on it. You're doing great with it!

Wow! I have a daughter who is vegan. Sometimes I find it challenging when it comes to feeding her when she comes for a visit. So good luck.
