All of the talking of gooseberries are making me look to see what on earth they look like. I don't ever remember picking them. We used to pick blueberries tho and they are quite small too and we had to watch out for the bears as we were doing it too...Merri

Julia, I am going to get a pressure cooker and try some different meat cuts in it. Any selection recommendations?

Gooseberries are tart and have a unique flavor. They're small and have that little thorn that always needs to be removed. The juice is sticky and attracts bees and hornets, so picking them can be an experience. They're small so picking them can bet tedious also. But they are so worth it once you taste that pie, or jam, in your mouth. Mmmmmmmmmmmmmmmmmmmm

God bless us everyone!

I have canned with one for years and the jigger on top has a safety valve of some sort so my husband said . Now I do have a good healthy respect for all things I have NO control over don't care who said what but so far I have not encountered a problem with it and it will hold 20 pints or 7 quarts and it is very big has a rack that I can separate the jars so as long as I am comfy with it ok I will use it but if it scares me I quit.
Just walked 3 miles so maybe I will start back losing weight hope so. Been hot today and thought I would melt walking but nope did not happen . See all you nice people tomorrow
PS what are the berries you were talking about? Never heard of them I know grapes that is about it . we have some in the yard and I made juice last year it is good with sprite

I've heard a lot of tales about pressure cookers blowing up, but I never knew if they were true or not. I'd like to experiment a little on some of the tougher cuts of meat to see what it does to tenderize. It seems it'd be a lot healthier than these meat tenderizers.

God bless us everyone!

Welcome, Kate.

My mom never had a blow up with her pressure canner. I had a small version once and it never blew either. I used it a lot to cook Sweetbreads. My DD loved sweetbreads but they are hard to find now. Gooseberries - Yes, my mom made pies, I think, out of all berries except she didn't like Mulberries. We kids ate all we wanted of them from the tree. I remember one summer living in Missouri my DH, DD and I picked wild Blackberries and I made so much jelly and sent cases of it home to my mom and dad. We also had a cow at that time and sent loads of frozen butter home with them also. Oh, I forgot about all those Black Walnuts we picked up. A small shed full of them but the squirrels thought we took too many and snuck in thru a hole and carried some back out. LOL My mom and dad sat as we did picking the meats out all winter and freezing them. Got to run for now. Dominick needs me to pick him up. Have a great day all.emoticonemoticon

HEALTHY REFLECTION JUNE 2 FROM SPARKPEOPLE

The future belongs to those who prepare for it today.
- Malcolm X, American spokesman for the Nation of Islam

Do you know where you're going?

Who tries to put together a puzzle without seeing a picture of the finished product? Who shoots an arrow without knowing exactly where they want it to hit? Your goals--particularly your health and family goals--are likely more important to you than puzzles and archery. So why trust them to luck or a fuzzy idea of what success is? If you can clearly state and see what your vision is, you're well on your way to seeing it come to life. From the beginning, world leaders with a strong, clear vision have been able to energize people with the possibility of greatness. In the same way, a vision can motivate you and keep you fired up. Instead of stumbling around, hoping to reach your goals, you'll know success when you see it, and know what needs to be done to get there. The clearer your vision, the more targeted your plan will be. What do you see?

Merri, I should have added this to last post but was thinking about you saying that I moved around... Well, my 85 year old BIL is out in the yard as we speak, mowing. He was there at 6 am. So I got up and got dressed and went out and drug the garden hose out of the yard. While I was up and dressed anyway, I went out and hoed the garden. Not a large garden only took about 20 minutes. I turned on the water, came in the house tossed sheets in the washer off the bed and made coffee. Back out to move the water and pull a few weeds. All this and was back in the house by 8. Nope I don't move around much...emoticon
Now sheets are back on the bed and meat in the crockpot for lunch. DH has decided that if I am fixing lunch for him, I can also fix it for our Summer hired man. Not much extra work except hired man is a meat and potato type and does not care for vegetables except corn and green beans. Now I need to go figure out a dessert, I will fix broccoli or something like that for DH and I. I cook, I eat so I have to fix something half way healthy and lower in calorie.

We certainly are glad to have you join us.

Dan, it is a pleasure having you drop in with memories. I never did the gooseberries. When I was a kid we had currents, close to gooseberries. And we had mulberries and wild sand plums. My mother made sand plum dumplings, jam, and jelly. If the jelly did not set we used it for syrup on pancakes. OH YUM!!
The sand plums froze this year so there will not be any. I think maybe at the bottom of my freezer there might be some. I really need to make some sand plum butter. That is my families favorite and it is easy to make. My DD has dewberries growing in her yard and always has lots of dewberries. She makes pies, not sure about dewberry jam?? I may have to try to make some.

Merri,
Your description sure fits me! I have hundreds of books and have become (almost)obsessed with reading them-hours and hours sitting...when the action slows down I have snack attacks. To compensate I walk around 2 or 3 hundred extra steps on my way to bathroom breaks or store or such and cut meals to the bone. I must break this cycle and clean the fish tank; and the book shelves!!!

Oh my! To have the TIME to pick stickers out of gooseberries! Maybe you can't find the pies because no one has the time to make them! With all the new-fangled kitchenware, I seem to have even less time to cook!

Retirement looks soooo inviting!

All this talk about canning and preserving food sure brings back good memories for me. I can remember Mom picking bushel basket after bushel basket of peas and the all of us sitting around shelling them. Dad would even stop by and shell a few while talking with us. I loved raw peas and ate my share of them as I shelled them. Did any of you every pick gooseberries and then sit and get the little sticker out of each berry? What a task that was, but the end product, pie or jam, was well worth it. I still enjoy a piece of gooseberry pie. Most people look at me strange when I ask for it. It's difficult to find any more, but I've got my sources.

God bless us everyone!

I was always afraid of the pressure cookers. I had a pressure sauce pan but was almost afraid to use it. There were always tales of the valve getting plugged and etc. Now we have microwaves.... And back to canning. I make my jelly in the microwave also apple butter. Don't have to stand and stir it constantly.

I remember the canning days too.
Mother had a water bath canner and a pressure canner.
She did some meat and lots of vegetables before we had a freezer.
I have had a good day with my food. I did not eat enough, but that is okay. It was too late to put more food into my body when I got home tonight and did my final calorie counts. I will do better tomorrow.

My mother's canned beef didn't have much fat on it at all. I could not stand eating fat ever so would not eat it if it had fat. I think she only canned sirloin. I had a pot luck today and did well. I see you are all talking about canning. I've never done it, but several of my friends, and my mom do it.
I'm just going to cook fresh troutemoticonthat my DB caught, and then get at the ceiling.

HEALTHY REFLECTION JUNE 1ST

All problems become smaller if you don't dodge them, but confront them. Touch a thistle timidly, and it pricks you; grasp it boldly and its spines crumble.
- William S. Halsey, WWII U.S. Admiral

Facing your worst fears

Your worst fears are usually the ones that never happen. Unfortunately, they're also the ones that keep you from trusting yourself and your abilities. Doesn't it seem silly to give up in the face of an anxiety that may be no more real than the fairy tale troll that lives under the bridge? If you approach a possible roadblock with hesitation, it might resist and break your resolve. But if you step forward with confidence, you can climb that wall, even one inch at a time, and pull yourself over the top. It's all about confidence, which you build by facing problems. Then you know that you can take on anything that comes along. The unknown monster under the bed is always scarier than the dust bunny reality

I never canned the beef myself. Just remember my mother doing it so that had to be 60 years ago. I remember the white tallow or whatever it was along with the beef and juice. Not lard that came for pigs. I also remember my mom and my inlaws making lye soap with lard.
I don't eat many pickles any more because of the salt. Salt and me don't get along too good. DH is supposed to limit salt, too. He loves dill pickles and really liked his mother's dill pickles.

Mother canned the meat in a pressure canner. If I recall she put the meat in the jar and poured the broth, grease and all over it and put on the lids and put them in a canner. I presume she cooked the meat first???

Good morning folks.
I loved that canned beef too. That is not to be for me as freezer is too easy.
I do make pickles each summer. I love home made ones best. Easy to make too. One of grand daughters always asks if I have any pickles. Think she could eat a whole jar and she is only 5.
Hugs to all and pick a rose for your table.

I remember canned beef too. I do crave it sometimes and wish my aunt was still alive to serve it. It had a special flavor to it that I haven't been able to duplicate. Marlene, if you have a recipe or recipes for canning beef, I'd love to have you share. The only problem is I'm not sure how much fat and cholesterol there would be in it.

Marlene, That beef was the best beef I ever tasted back then. I wasn't a meat eater but I sure liked that canned beef. DH came over and had supper with me. I made a good meal. My MIL made dill pickles in those jars that had rubber rings and when the pickles pickled they would fiz and seal the jars. I used to make a lot of bread and butter pickles but I just buy them now. I canned a lot when my kids were home but for two people most of the time, I either buy them canned or frozen. Sometimes fresh and cook them. Too much work and a lot of mess. I had more time when my kids were young???? Something wrong with this picture.
My Mother canned, too. I remember her canning beef. Now we have freezers.

HEALTHY REFLECTIONS MAY 31

You cannot hope to build a better world without improving individuals.- Marie Curie, Nobel winning chemist

Are you connecting with the world around you?

It's normal to be concerned about the effect you have on the world. You may look for opportunities to help others, but are often unsure where to start. Here's a good strategy: Make it your business to build people and help them improve themselves (and that includes yourself). You can have a much stronger effect on people this way than if you did hundreds of hours of secluded community service. Start by improving yourself and developing the strengths that can set an example for others. Then use your strengths to help others develop their own. You don't even have to wait! What are you already good at? Take that skill and put it to use for the good of your community, or teach it to someone else. For a better world, do less FOR other people, and do more WITH them.

Good morning everyone. I have a problem getting all my potassium in daily. If I get enough then my calories go up or my fiber which really goes up. I can not seem to get it adjusted. I eat lots of fruit and veggies and the dr told me to eat plenty of potato especially the skins BUT there goes the calories. And she wants me on 1200 calories! Isn't there a magic cure? LOL Sermon was great this morning - sub Pastor preaching from U. of Mobile, AL. Have a great day all and any suggestions would be appreciated.emoticonemoticon

Hello folks.
Welcome to our newbie. Hope you stick around. Great group.
Dan - thanks for posting a picture. Nice to know who we are talking too. Good picture.
Erwin is mowing the lawn and I am working on last minute list for RV. We get it back tomorrow. Hopefully will have AC pm dash now. Seems a part was missing. Glad we did not have to pay for the fix.
Nice and hot here at the beach.
Deck has sun tea ready for you folks.
Come on down . Have a nice piece of fresh bread and a sandwich with your tea. Low calorie cookies out there too. Erwin keeps me supplied in those.
Hugs to all and have a great day.

I guessed at my weight yesterday morning. The last time I weighed, one day last week, my weight was a little lower than 175.
I will do an official, current weigh-in tomorrow morning.
I weighed 290 pounds many years ago, 1969.
I weighed 164 pounds when I got married in 1975.
Since I got married I have see-sawed from 148 to 234 pounds.
It has taken a long time to accept the fact it has to be a lifestyle change, a diet is not going to do it for me.
I am an EE eater; most of that happening after dinner.
I made my goal weight (160 pounds)again last October.
I am now weighing on a new scale, Wii Fit.
The Wii Fit is weighing me 5 pounds heavier than my old scales.
My mother was put into a nursing home about 6 weeks ago. This has brought on stress and emotions. I have not been counting calories, counting my water or exercising as I need to be doing.
I started my water journal yesterday.
I started my food journal this morning.
I am going to get on Wii Fit and do my 30 minutes exercise today also.
I long to see 160 pounds on that Wii Fit.

Hope every one is having a great weekend gee in the morning it is June 1 that is half of this year where did Jan. go?

Thanks ladies. My mother-in-law lives about fifteen miles from us and is doing very well. She's home and able to care for herself again. Of course, she loves the attention that her daughter, my wife, gives to her.

God bless us everyone!

Marlene, Your MIL sounded a lot like mine - always growing and canning food. My mother was like that too. Good old days.
Dan, How lucky we are to have or to have had great families. Good to see your face. Thanks for doing that.
Faye, Welcome to you. Great bunch of people here to talk to and get help. I'm finally on the right track again after medical problems.
Barbara, I love your reasoning for eating the pie! LOL
Merri, I used to throw fruit in the blender for my mother and puree it with the skins. Almost like eating sauces but healthier. I did lettuce like that also but not quite pureed. Blenders are great for chewing our food for us. LOL

I got my hair cut this morning, cleaned, and went to lunch with DD again. I ordered a broiled fish sandwich without the roll. Had lettuce and tomato, cole slaw, and a small piece of bread which DD ate for me. She also ordered Fried green beans and I did eat about 4 of those. I love the things. I brought half of my food home and ate it for supper. Yay for me! LOL I feel soooo good after working on the cleaning and now house smells so good too. Have a great night and don't forget church in the morning.emoticonemoticon

Big Dan shows his face. Now we can see who we are talking to. Thanks, Dan.
Mother in law still doing good? Does she live close to you and your wife? I had a wonderful MIL. She raised 9 children and was a wonderful cook. She grew a great big garden and canned every thing. After electricity came to the farm and they got a deep freeze she saved cottage cheese cartons and the like and froze strawberries. Many a day I spent at their farm picking strawberries, green beans, plucking chickens and etc. Chickens and strawberries in the freezer. Now that was the good old days. We had a great time. There were sister in laws around my age and we would all gather at "Mother's" and do various things. When our kids were small we went to Grandma and Grandpa's every Sunday for dinner.
Memories.

HEALTHY REFLECTIONS

It is better to live one day as a lion, than a thousand days as a lamb.- Roman proverb

Are you a lion or a lamb?

How will your life be remembered? Will your story be lost among the millions who were afraid to take a chance? Or will you leave something noble behind? There's nothing to gain by following the crowd or doing what you've always done. You may as well put yourself out to pasture. But there's everything to gain by believing that you're king or queen of the jungle, even if just for a day. (Go ahead and roar if you want to.) Each of us has an amazing opportunity to live large if we allow it. It takes leaving the comfort of our familiar meadows and walking into the unknown. Once you take that chance, you've made your days worthwhile. Even if you have few resources, adventure is around every corner, and life is waiting to be devoured. If you were to write the book of your life, would you want to read it?

hello folks.
Not sure which end is up lately. I feel great but do not seem to get as much done as I used to .
Ready for that trip and need the time with Erwin. I am back to being a good wife. Felt like I neglected him for 7 months. He says that is not true and not to think that way.
He is my sunshine.
Maybe I need more ice cream and apple pie. Been eating the pie to get some fruit. Raw does not agree with me. Ice cream to get my calcium. lol
Hugs to all.

New here. Not new to trying to eat healthy.
I have been looking at different things in SP for a few weeks.
There seems to be a lot to learn before I can navigate easily in SP.
I plan to start my food, water and exercise journal on SP beginning May 31 or June 1.

I did get some things done but had an unexpected guest show up this afternoon and then another one so spent about three hours with them. It was enjoyable but now I'll have to reschedule for tomorrow and Monday. It is the unexpected things in our lives though that makes it interesting and sometimes exciting. Everyone, have a great weekend!

My mother-in-law will be 87 years old tomorrow and is back on her feet in her own home after double knee replacement just one month ago. What a lady!

God bless us everyone!

Home again. I did a lot of shopping and now I am worn out. I need to go out and check on the garden. Up in the 80s today.
