We usually use half a time- what's worked best for me (and is easy) is to just leave the pit in the unused half, add a little lemon juice, and then put the emptied half shell back over the top. I do have a special avocado holder that's supposed to prevent air from getting in, but I find this works better and is much simpler! Keeps it quite green the next day, after a couple days there may be a few spots of browning (usually along the edges).
If it's prepared/mashed/guac/etc, I know people who swear by storing it with a layer of water on top. I just avoid the issue by only making as much as we need for each meal.
