I use it for stir fries most often, Eggroll in a bowl, Crack Slaw, Pork and Cabbage stir fry, kielbass and cabbage stir fry. But if not, I also just slice it up, drizzle oil and garlic, thyme, slat and pepper and bake it until it's pretty browned. Delicious! I love cabbage rolls also but take the short cut and just shred the cabbage and bake it in layers like lasagna with the meat and sauce.

I use it instead of spaghetti when I make a red sauce. Crockpot chicken thighs, diced tomato and it. seasoning and serve that over the top of saute'd cabbage. Seriously yum. The key to good saute'd cabbage is to slice it fine and cook in butter over low heat. 15 minutes will yield a soft, buttery and mild cabbage. Many people overcook it and use a high heat and that will bring out the sulfur components of its flavor.
We use shredded cabbage for a base for taco or burrito ingredients. I find we eat more cabbage than anything else, but it tastes so good that way and vastly cuts the calories of our favorite Mexican foods.
I have mangled a braised cabbage recipe into this. Chop onions and start to sautee in a pan with olive oil. Add chopped cabbage and start to cook down. I add spicy dumpling sauce because it easy, the original recipe called for Chinese Five Spice and a little water. Keep cooking down until the cabbage is tender. Serve over brown rice. I have been known to use up the last of pinto beans, carrots, or mushrooms in this as well.

We also use it to make coleslaw (with greek yogurt instead of mayo) and okonomiyaki, japanese-style savory pancakes (we buy ready-made okonomiyaki flour and just add shredded cabbage, carrots, green onions, and water).

Personally, one of my favourite easy meals is doing a quick stir-fry of shredded cabbage with onions / mushrooms / garlic / random-other-veggies, some leftover cooked meat, and using either a purchased hoisin sauce or some leftover homemade sauce (I always make extra meats and sauces and freeze in portions).
Another easy option is to do "deconstructed cabbage rolls", where you just cook all of the ingredients together using shredded cabbage (can do it in a casserole dish in the oven, using the slow-cooker or pressure cooker, or even just saute on the stove) and skipping the "roll" part.
I also enjoy cabbage as a cooked side dish. To me, it tastes great whether steamed in chunks, or roasted in chunks (coat in a little oil and add spices to taste), or sliced in to "steaks" and grilled (again - a bit of oil and spice to taste).
